Last night we hosted our first official dinner in The Vaults, an unforgettable evening of elegance and festive cheer. Guests indulged in a luxurious four-course meal, by our in house caterers Blue Strawberry Event Caterers culminating in a spectacular flaming Christmas pudding for all. The tables were adorned with silverware straight from the The Skinners' Company Silver Vaults, adding a touch of heritage and grandeur. The bespoke, handcrafted long tables and chairs provided a warm and intimate setting, perfectly suited to the occasion. We had the privilege of using our newly commissioned kitchens at 8½ London last night, and the atmosphere was nothing short of magical. There's something truly special about the scent of freshly baked mince pies filling the air. Seeing that our guests raved about these buttery, crumbly delights, we couldn’t resist sharing the recipe with you. Whether you're planning a cosy evening by the fire or looking to impress at your next gathering, these mince pies are sure to be a hit! Ingredients: For the Pastry: 225g plain flour 125g unsalted butter, cubed and chilled 25g icing sugar 1 medium egg yolk 2–3 tbsp cold water For the Filling: 300g mincemeat (choose a quality one or make your own for extra flair) 1 small apple, peeled, cored, and grated (adds freshness) Zest of 1 orange Method: Make the Pastry: In a bowl, rub the butter into the flour until it resembles breadcrumbs. Stir in the icing sugar. Add the egg yolk and water, mixing until it forms a dough. Wrap and chill for 30 minutes. Prepare the Filling: Combine the mincemeat, grated apple, and orange zest. Set aside. Assemble the Pies: Preheat your oven to 200°C (180°C fan). Roll out the pastry to about 3mm thick and cut into rounds to fit your tin. Line the tin with pastry rounds, fill each with a generous spoonful of the mincemeat mixture, and top with a smaller pastry round or a festive star shape. Bake: Brush the tops with a little milk or beaten egg for a golden finish. Bake for 15–20 minutes until lightly golden. Finish: Cool slightly, then dust with icing sugar before serving warm or cold. Pair with mulled wine or a cup of spiced tea for the ultimate festive treat.
