Over the last 36 months “building The Cabrach Distillery” has been a significant, day in, day out focus, alongside our wider work at The Cabrach Trust. At times, this project has been all consuming, extending across fundraising, process design, architecture, building works, licensing, trouble shooting, brand creation, product launches, and commissioning. But way beyond a building project, this has been about creating what we believe is a one-of-a-kind social enterprise; the sort of social enterprise that can fuel longterm, systemic change for a community. And (hopefully) the sort of social enterprise that people, both near and far, are drawn towards. (… that we might create an extraordinary Single Malt Scotch Whisky is a wonderful aside for another day). On Friday, we reached a major milestone as we opened the doors to The Cabrach Distillery for our First Spirit Ceremony. This was a special day for #TheCabrach, representing the collision and culmination of so much work, by so many folk. But what really stood out was the response from the community. Incredible to see. A late train South to Edinburgh tonight provides a moments pause for thought. I’m thinking about our Trustees and Directors whose belief didn’t falter, our funders who rallied behind the vision and bought into the business plan, our design team who crafted blueprints from ideas, and our contractors who brought those blueprints to life, painstakingly restoring our 19th century steadings for their new life at the heart of a community regeneration masterplan. This afternoon, I left the team working away in our beautiful stillhouse at Inverharroch. A once old, cold, tumble down steading, now our living, breathing, warm, gorgeous #WhiskyWithPurpose distillery.
