With the countdown fully on, we can reveal the 11-course roaming tasting menu for the inaugural Gault&Millau UAE Culinary Innovators showcase, supported by Dubai Calendar. Taking place at ICD Brookfield Place’s “The Space” between Thursday, October 24, and Saturday, October 26, Gault&Millau will host an 11-course, roaming tasting menu. Ticketholders will enjoy one dish from each chef with an accompanying beverage pairing served along the journey. Rather than recreating dishes from their restaurants, each of the 12 chefs was challenged to create a dish exclusively for the showcase so guests could expect entirely new inventions alongside an ‘innovative’ spin on restaurant favourites. https://lnkd.in/g-Xt-K-S

Traditionally, however, that hasn’t been the case in the UAE, where drinks lists have generally been viewed as second to produce and service. On the day Majlis by Pierre Hermé opened in Rosewood Abu Dhabi, Gault&Millau UAE editor David Joseph Constable sat down with the world-famous chef to talk techniques, inspiration and controversial flavours. Majlis by Pierre Hermé opened last week – the first haute pâtisserie from the world-renowned pastry chef to come to the UAE capital. “There is also the infamous and aforementioned figus foie gras macaroon. Velvety and smooth, it is a particularly brilliant combination of luscious goose liver and Piedmont hazelnuts. Chef Michael van der Kroft from the three-toque Tres restaurant in Rotterdam will collaborate with Mohamad Orfali on a dish at the inaugural Gault&Millau UAE Culinary Innovators later this month.
