Whey, the liquid byproduct of curdled milk, is often used in protein powder and cheese production. However, it can be easily contaminated by bacteriophages that cause fermentation failures and negatively impact the final food product. Scientists are exploring Ultraviolet C (UV-C) radiation as a potential treatment for contaminated whey. A recent study used GC-MS/O to compare the sensory profiles of treated and untreated whey to identify off-flavors produced from UV-C treatment.
