    “We work with our customers to secure a healthier planet.” In a 90-second elevator pitch, our colleague Tina Sejersgård Fanø explains our Planetary Biosolutions business. “Our biosolutions can reduce the use of energy, chemicals and water, and they can help our customers get more from less,” she says.     Next week is World Water Week. This year’s theme focuses on water cooperation for peace and security. We are happy to announce that Novonesis will be hosting an online session during World Water Week on Monday, August 26 from 4:00 to 5:00 PM CET, and you are invited to join.     The beginner's guide to fermented food by the chef who pioneered fermentation at three-Michelin-star restaurant Noma In a feature interview by Business Insider, our colleague and fermentation expert David Zilber talks about fermented food and how it can improve people's gut health. Due to the power of good microbes or probiotics, fermented foods can contribute to smoothing digestion, strengthening immunity and boosting mental health.  David also says that fermenting is surprisingly easy to figure out:  "I always like to say that if you can make a salad, you can make fermented foods because they are on par in complexity." Fermented foods are created when live bacteria or yeast are added to foods like vegetables, tea, or milk, and are known to increase the diversity of microbes in the gut microbiome, which is a sign of a healthy gut. David was previously the director of fermentation at Noma, and he was co-author of the acclaimed "The Noma Guide to Fermentation". In the article, he shares recipes for pickles, sauerkraut, and kimchi that beginners can try at home. According to David, lacto-fermentation, which uses lactic acid-producing bacteria, is a good place to start.     How HMOs can be used as nature's blueprint for better health Yesterday, we were happy to welcome Professor Lars Bode from the University of California San Diego (UC San Diego) Human Milk Institute who visited our site in Hørsholm, Denmark and shared his thoughts and research in the field of Human Milk Oligosaccharides (HMOs). The visit highlights the partnership between Novonesis and UC San Diego, announced in March earlier this year, which is focused on pioneering research on HMOs and Synbiotics. Professor Bode's visit marks a key moment in our ongoing collaboration. We are honored to have hosted such an esteemed researcher and are looking forward to furthering our partnership. The visit was filled with insightful talks, networking, and even HMOs and Probiotics tastings for everyone.     Taste the future: Fermented plant-based foods made with biosolutions   In the latest edition of our biosolutions bulletin, we focus on how we can learn from plants and fermented plant-based foods. In the world of food innovation, fermented plant-based foods have recently come into the spotlight. From leading a quiet life on the sidelines of mainstream diets, the vegetal cuisine is now taking center stage, and many efforts are put into elevating its culinary appeal. For thousands of years, humans have been fermenting plant products like fruits, leaves, and roots to create a variety of foods and beverages. For example, wine from fermented grapes, bread from fermented dough, chocolates from fermented cocoa beans, miso from fermented red beans, or kimchi from fermented cabbage. Not to mention the coffee, tea and olives we love, without even thinking of it as fermented plant-based foods. However, it was only recently in the early 19th century that scientists discovered that microbes like bacteria and fungi cause fermentation. It took almost another hundred years for research in food science, biochemistry, microbiology and other fields to understand why certain foods taste, smell, or feel the way they do.     Biosolutions wage war on climate change: Crushing carbon emissions for a greener future A new article from our most recent edition of our biosolutions bulletin focuses on the role of biosolutions in enabling us all to contribute in the fight against climate change. While each of us contributes only a small amount, the cumulative impact of over eight billion people in the world is substantial. Over the past decades, there has been a gradual shift towards more environmentally friendly and sustainable production methods across various product categories, and biosolutions are part of driving that change.  "By integrating biosolutions into the production process, we reduce carbon emissions, making our choices and actions more sustainable and environmentally friendly," the article reads.
