our crowdfunding campaign officially kicks off today! 🥳 and to be completely honest, these past few weeks have been a rollercoaster of emotions behind it — angst, excitement, nerves, you name it… when we started Pistakio in college last year, we never could have imagined the amount of love we’d have gotten from our community in only 6 months of launching. this is a product that i’m truly so passionate about and being able to share it with a strong and loving community of pistachio-lovers has been my favorite part of this journey. i still remember being half-way through my college days, when i decided to go to culinary school because i had a fascination for food, and celebrating food with people i loved — i was *almost* certain that i wanted to be a chef. it brought me so much joy to cook for others that i thought it was the right path for me, until i discovered how life in a kitchen would be… i felt lost. i didn’t know what the right path was for me was, until one day, Nicola Buffo said to me, “if you were to become a chef, there would only be so many people who would get to try your food, and be able to visit your restaurant. but, if we were to build a brand, the products you make could reach so many more people” in 6 months, we’ve already sold 20,000 jars and reached more people than we could have imagined; all while starting with practically nothing. since the beginning, our mission has been to make pistachios a pantry staple, and spread the love for pistachios to every household nation-wide. we’re launching this campaign to do JUST that. we want to make more products, be in more places, and grow, so more people can come along the journey! here’s the link: https://lnkd.in/gDZU6RWh to learn more about the campaign, invest, and get credits back to try Pistakio! i hope you’ll come along the journey 💚

This summer, I had a life-changing burger in Barcelona that had pistachios—it was a dessert burger like no other. Back in the States, I searched for something similar and discovered Francine Voit and Pistakio. Fran noticed that while grocery stores were stocked with almond and cashew butters, pistachio products were missing. We went live on KOIN-TV yesterday to talk about a special dessert we made with our friends at Orange & Blossom Patisserie! Pistachio olive oil cake, a scoop of Kate’s pistachio ice cream, topped with Pistakio drizzle, fresh peaches from Baird Family Orchards and a sprinkle of oat crisp. 100% vegan and gluten-free! Thanks so much to Everyday Northwest for this segment 💚🍨🍰 We’ll be sharing this yummy treat at the Circle V Portland event this Sunday from 12-4pm. Come celebrate Portland’s delicious and diverse vegan dining scene. Twenty of Portland’s most beloved vegan restaurants will be offering collaborative dishes. A portion of ticket sales will benefit food equity nonprofits Growing Gardens Oregon and Urban Gleaners. The 2024 festival will be held at Castaway in NW Portland on Sunday, September 22. exactly a year ago, Nicola Buffo and I moved to a new place without knowing anyone, or having visited before. all we had was a gut feeling that this was the place for a fresh start — a place that was open-minded and had a strong community filled with passionate makers. we strongly believed this was the place for us to start a new business, so we worked hard & grinded, juggling jobs to pay the bills, while launching a startup called Pistakio ‼️ this past year was a rollercoaster, we signed a lease and told ourselves we had a year to see if Pistakio would go anywhere. and if not, we’d find a “normal” job… well, we renewed our lease & we quit our jobs last week to go full time into our company, AND we’re planning to start raising money next month (for the first time ever). it was so scary to take that leap of faith last year, but i can’t wait to see where this next year will take us 🤞🏼
