But a quarter of restaurant employees aged 24-35 consider themselves lifers. "This is a profession. This is a career," said Kelly Phillips, co-founder of Destination Unknown Restaurants. As I continue to explore new opportunities, I took some time this morning to reflect on three significant takeaways I've had over the last few weeks. 1. The industry I am in never fails to impress me, with its abundance of incredible individuals. The number of people who have provided introductions and referrals is truly remarkable (there are too many to list in this post, but they know who they are)! 2. This journey has been incredibly educational. It's enlightening to take a step back and observe vast array of new technologies and advancements that are shaping the restaurant industry. 3. Personal reflection on what I desire in my next role has been paramount. In almost every conversation, I've been asked, "What do you want to do next?" I think it's common for many of us to have taken a job for the wrong reasons, such as pay, title or I just need a job. I'm seeking advice from my experienced connections on a career transition challenge. With a background in Restaurant Management, including roles as Manager, General Manager, and Director, I am now transitioning to the Technology industry, focusing on entry to associate level restaurant point of sale technical support. I've faced rejections due to job titles/experience on my resume being to advanced for the positions that I am applying for. I have omitted some of my work history, even though the duties and accomplishments would be relevant just to stay within the recommended two pages. For day 3, I'd like to highlight a professional experience that I am thankful for, despite being overwhelmingly negative. As a starving student, it took 6 months of applying with no experience to waiter jobs before I got a hit at Gourmet Burger Kitchen. Fantastic place to work despite student pay with excellent coworkers and good perks. Sadly, after 3 months there, we are all called in for a meeting where we learned the lease has been bought out, and we're all being laid off. Not discouraging, I set out in search of a new job, and very quickly had an interview at a large Italian restaurant chain. The interview went well, they accepted my request of £7.50 an hour. After my first shift, I quickly realized there were issues present. Severely understaffed, with what few waiters there were running up and down dangerous staircases in a converted cathedral, waiters were expected to make the desserts as the kitchen was understaffed, and the assistant manager who had been all smiles during the interview turned into a monster, while the general manager quit on my second day. I stuck it out to my first paycheck: they had paid me £5.50 an hour, £2 below the agreed upon rate. I told the assistant manager, who said he'd look into it. The next day, 2 incidents led me to quit: the first was being called into a meeting where I was told by the AM "if we pay you more we have to pay everyone more". The second came hours later as my then-girlfriend came in at the end of my shift, and the AM leaned over and whispered something about her that is not worth sharing years later. I immediately told him he could expect my resignation the following day. Moral of the story: being a decent human being is the number one most important skill in management. Last week, I had an enjoyable conversation with clients over dinner, where we shared stories about early jobs and how they shaped our careers. It made me reflect on my own journey and the lessons I learned during my time in the service industry. Before I ventured into the business side of building and construction, I spent my teens and early twenties working in fine dining. I started in the dish tank and quickly moved to working on desserts, and then Pantry station, Sauté and Grill. At 21, I was somehow trusted enough to take on the role of Sous Chef and lead my first professional staff. It was an incredible experience filled with a thousand hilarious and sometimes harrowing stories that I still enjoy sharing. Here's the gist of what I believe I've carried with me since those days in the kitchen: Sense of Urgency: In the fast-paced environment of a kitchen, every second counts. The dinner rush taught me to work quickly and efficiently without compromising on quality. Attention to Detail: From perfecting a dish to ensuring consistency and properly managing food costs, attention to detail was paramount. This skill has been crucial in my career, ensuring precision and excellence in everything I do. Perseverance and Quality Control: The relentless pursuit of perfection and the commitment to delivering high-quality results have been ingrained in me since my culinary days. Team Building: Collaborating with a diverse team in a high-pressure environment taught me the importance of communication, trust, and teamwork. Customer Service: Ensuring guest satisfaction and handling feedback gracefully helped me develop a customer-first mindset that I carry into all my professional interactions. There was no rush quite like the dinner rush – the adrenaline, the chaos, and the sheer determination to serve every guest with excellence. And then came the denouement, the calm after the storm, where you and your team put the pieces of the kitchen back together, ready to do it all over again the next day. These early roles can be far from glamorous, but they build the foundation upon which great careers are built. No beginning, no matter how humble, is inconsequential. My wonderful friend and colleague Sophie Dawson opened up about A-Level results day... this is just heartwarming! Read it here... 🤩💗 🎉 Happy A-Level Results Day! 🎉 "Happy" might not be the first word that comes to mind! I vividly remember the anxiety of waking up on this day, unsure if I had achieved the grades I needed to get into university. Like many, I had big plans for September and worried about what the future might hold. When I finally opened my results, they were decent - I was relieved, but then something unexpected happened. I realised I wasn’t ready to dive into a degree just yet, especially since I still hadn’t figured out what career path I truly wanted. So, I made the decision to take a gap year and landed a part-time job at The Sportsman, an Ember Inns pub. Fast forward to today, and it turns out that not having a degree hasn’t held me back at all. I’m in a job I love, working for a company that values and supports me. My journey in hospitality has been incredible, and I’m now pursuing my Level 5 HR CIPD qualification with exciting opportunities ahead.
