VANILLA HISTORY IN INDONESIA!?! The history of the vanilla plant (Vanilla planifolia) is rich and intertwined with the cultures of Mesoamerica, particularly those of the Aztecs and Mayans. Vanilla is native to Mexico, where it was first cultivated and used by indigenous peoples for centuries before European colonization. The Totonac people of Mexico are believed to be among the first to cultivate vanilla. They called the vanilla orchid "tlilxochitl," which means "black flower," and they used it primarily for its aromatic qualities. Vanilla was also utilized in various religious rituals and ceremonies by the Aztecs, who conquered the Totonacs around the 15th century. When the Spanish conquistadors arrived in Mexico in the 16th century, they encountered vanilla and brought it back to Europe along with other treasures from the New World. However, vanilla was initially not as well-received in Europe as other commodities like cocoa and tobacco. This was partly due to the fact that vanilla beans needed to be hand-pollinated, a process that wasn't fully understood in Europe at the time. It wasn't until the 19th century that a method for hand-pollinating vanilla orchids outside of their native habitat was successfully developed. This breakthrough occurred on the French island of Réunion (then known as Île Bourbon) in the Indian Ocean. A slave named Edmond Albius discovered that the vanilla orchid could be pollinated by hand using a simple technique involving a thin stick or blade. This discovery revolutionized vanilla cultivation and allowed it to be grown in regions outside of its native range. As a result, vanilla production spread to various tropical regions around the world, including Madagascar, which is now the largest producer of vanilla globally. Today, vanilla is an essential ingredient in numerous culinary applications, ranging from baking to confectionery and even savory dishes. Its unique flavor profile and fragrance continue to captivate people around the world, making it one of the most popular and valuable spices. However, vanilla cultivation faces challenges such as climate change, diseases, and labor-intensive pollination methods, which can impact its availability and price. Any inquiry? Vanilla was once considered a gift from the gods and is now the most popular and widely used flavor worldwide. Today, cultivation of this unique flower barely comprises 1% of global demand. Vanilla planifolia, a sprawling tropical vine, is a member of the orchid family, which includes approximately 25,000 species. Out of all of the orchid species, vanilla is the only one that produces edible fruit – what we know as the vanilla bean. Vanilla is native to the eastern mountainous region of Mexico and was cultivated by the Totonac people and likely the Maya before them. The Totonac used vanilla beans for medicinal and religious purposes, not for culinary ones. They believed it was a gift from the Gods, and their lore told how the vanilla orchid sprouted from the blood of a dead deity. Spanish conquistadors eventually usurped vanilla and carried the prized vine back to Europe, where it was offered to royals and aristocrats. From there, Vanilla was brought to the French colony Bourbon, modern-day Renunion, where it failed to produce its ambrosia seed pods. Something was missing. Vanilla’s specialized pollinator, the Melipona stingless bee, a native to the Mesoamerican tropics, was needed to make the vines fruitful. Without these miniature bees, vanilla flowers would not be pollinated. This led to an unlikely discovery. A 12-year-old slave named Edmond Albius discovered that vanilla could be pollinated with a blade of grass by touching the anther to the stigma (male and female parts of the flower). This same technique is still used today. Edmond's discovery opened the door to the commercial cultivation of vanilla outside its native range. Today, vanilla is cultivated in several countries, with nearly 80% coming from Madagascar and Reunion. But this only makes up 1% of all the vanilla flavoring consumed today. The other 99% of vanilla flavoring is synthesized from the petrochemical precursor guiacol or lignin, a far cry from what was once considered a divine spice. Several giant food companies recently announced they would be phasing out artificial flavors, including vanilla. At the same time, the production of natural vanilla is declining. The biggest challenge in meeting the demand is the precarious nature of cultivating vanilla. Vanilla is a great addition to cacao plantations, lowland coffee farms, hardwood plantations, and mixed agroforestry farms. In these examples, trees are already in place to provide the necessary shade and climbing structure for vanilla vines. Vanilla provides early cash flow in an otherwise long-term agroforestry system and diversifies revenue for coffee and cacao farmers who are beholden to market uncertainty. Over the past 500 years, vanilla has become known as a product of one island in the Indian Ocean, a world away from the vine's original caretakers. A resurgence of the vanilla vine in Mesoamerica is needed to ramp up production and bolster the region's existing tree crops.

The Miyazaki mango, known as the "Sun Egg" for its vibrant color and egg-like shape, is renowned as the world's most expensive mango, fetching over $5,000 a pair in Japan. This luxurious fruit is cultivated with meticulous care. Interestingly, Bangladesh has now become a new home for this sunshine-colored delicacy. Initially brought to the country by hobbyists, the Miyazaki mango has gradually moved into commercial production. The 2023-24 season marked a record harvest of 25 tons, fueling hopes for even greater yields in the future. While the price in Bangladesh is much lower than in Japan, ranging from Tk1,000 to Tk2,000 per kilogram, it remains a premium fruit. Experts highlight that the key difference lies in cultivation methods. In Japan, a meticulous approach involving special greenhouses and precise monitoring produces the vibrant red hue that enhances the Miyazaki's prestige. These methods are not yet widely adopted in Bangladesh. Despite the color difference, Bangladeshi Miyazaki mangoes are gaining popularity. The Department of Agriculture Extension is actively promoting its cultivation, and the future looks promising for the Sun Egg's rise in Bangladesh.

Having a family cacao farm in El Salvador gives us an amazing understanding of the entire journey from tree to chocolate 🌴 This cacao starts from Finca Cuyancùa in Izalco where it is grown by the expert hands of the farm's team led by JuanRa's father Rafael. Fine flavor trinitario acriollado and DNA test-confirmed criollo cacao trees grow underneath the tropical rainforest canopy, in community with other plants such as mango, banana, star apple, avocados, oranges, tropical flowers, vanilla, and cinnamon. The farm showcases agroforestry at its best! Innovating agricultural and post-harvesting practices ensure that the cacao is properly fermented and dried to retain all its aromatic potential. Two times a year we import this cacao (that we named Cuyancùa after the farm) directly to Olbia, together with the cacaos from our other Salvadorean farming partners. Once in our hands, we take care of preserving its authentic characteristics with a mild and slow roasting, stoneground refining and no conching. Cuyancùa cacao expresses delicate nuances in the ceremonial cacao (rich in honey, coffee and dried fruit notes), in the 72% dark chocolate with Specialty Coffee Beans (to complement its natural coffee undertone) and in the pure 72% Cuyancùa with cane sugar 🍫 If you have never tried a tree-to-bar cacao, this is your chance (we ship all over Europe): https://lnkd.in/dMUx4Equ

Vanilla cultivation, particularly in regions like Madagascar, is indeed a meticulous process that requires careful attention to various environmental factors. Madagascar is a very important player in the global vanilla market, and the unique island's climatic conditions have a significant impact on the taste and quality of vanilla due to seasonal variations. Let's delve into the key seasons of vanilla cultivation and their significance: Rainy Season (July–August): This marks the beginning of the flowering phase, leading to more intense beans. Dry Season (October–December): The dry season is vital for the maturation of vanilla beans. Peak period for drying and ripening the beans, essential for extracting vanilla aroma. Lower humidity during the dry season increases the concentration of aromatic compounds in vanilla beans. Harvest Season (July to September): Favorable weather conditions during the dry season lead to peak flavor development. Meticulous harvesting is critical to preserving the delicate balance of vanilla flavor compounds. Thriving in warm, humid climates with specific soil conditions, these orchids require careful attention, including partial shade and support structures for their climbing vines. Beginning with site selection and soil preparation, vanilla bean cultivation involves hand-pollination, meticulous growth maintenance, and a labor-intensive harvesting process.
