As the weather gets colder, there's nothing like a warm bowl of pumpkin soup to keep you cozy. Here's my favorite quick and yummy recipe: 👉 Cook Vegetables: In a large pot, heat the coconut oil over medium heat. Add the onion, garlic, and carrot. Sauté until the onion is translucent, about 5-7 minutes. 👉 Add Pumpkin and Spices: Add the pumpkin, cumin, cinnamon, and ginger. Cook for 5 minutes, stirring occasionally. 👉 Add Broth and Simmer: Pour in the broth, bring to a boil, then lower the heat. Cover and let simmer for about 20-25 minutes, or until the pumpkin is tender. 👉 Blend: Use an immersion blender to blend the soup until smooth. If you don't have one, you can blend in batches in a regular blender (be careful with hot liquids). 👉Add Coconut Milk and Serve: Stir in the coconut milk, then add salt and pepper to taste. Serve with a garnish of cilantro or parsley if you'd like. Enjoy this delicious pumpkin soup, it is perfect for chilly days! #pumpkinsoup #cozyfood #coldweathercomforts #soupweather

Happy International Pancake Day! 😍🙌 Want to enjoy some tasty pancakes without feeling guilty? Here’s a healthy wheat flour pancake recipe that can help protect your liver: 1) In a bowl, whisk together the whole wheat flour, baking powder, and salt. 2) In a separate bowl, whisk together the honey or maple syrup, milk, egg, and melted butter or coconut oil. 3) Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. 4) Let the batter rest for 5-10 minutes. 5) Preheat a non-stick skillet or griddle over medium heat and lightly coat with cooking spray or a small amount of butter. 6) Spoon about 1/4 cup of the batter onto the skillet for each pancake. If desired, add your preferred additional ingredients like sliced bananas or blueberries. 7) Cook until bubbles form on the surface of the pancake, then flip and cook for an additional 1-2 minutes until golden brown and cooked through. 8) Serve the pancakes warm with your favourite toppings such as fresh fruit, yogurt, or a drizzle of honey.
