As the weather gets colder, there's nothing like a warm bowl of pumpkin soup to keep you cozy. Here's my favorite quick and yummy recipe: 👉 Cook Vegetables: In a large pot, heat the coconut oil over medium heat. Add the onion, garlic, and carrot. Sauté until the onion is translucent, about 5-7 minutes. 👉 Add Pumpkin and Spices: Add the pumpkin, cumin, cinnamon, and ginger. Cook for 5 minutes, stirring occasionally. 👉 Add Broth and Simmer: Pour in the broth, bring to a boil, then lower the heat. Cover and let simmer for about 20-25 minutes, or until the pumpkin is tender. 👉 Blend: Use an immersion blender to blend the soup until smooth. If you don't have one, you can blend in batches in a regular blender (be careful with hot liquids). 👉Add Coconut Milk and Serve: Stir in the coconut milk, then add salt and pepper to taste. Serve with a garnish of cilantro or parsley if you'd like. Enjoy this delicious pumpkin soup, it is perfect for chilly days! #pumpkinsoup #cozyfood #coldweathercomforts #soupweather
