Do you ever feel like your sourdough loaves are falling flat? 🙁 Over-proofing occurs when your sourdough based dough has fermented for too long or at too high a temperature, leading to an under expanded, delicate dough. The result is often a flat and less than satisfying loaf. This is a common challenge in sourdough breadmaking, but we've got your back with some expert guidance to help you conquer it. 🙌 #BakingwithLesaffre #Sourdough #overproofing #tips

What could be more delicious than a warm and freshly baked bun or roll for breakfast? 🥯 The challenge is to maintain a dough-friendly process! And this already starts at our sheeting lines. We like to use a highly hydrated dough with a very long fermentation time. After fermentation, the dough has to be shaped in the most gentle way to maintain the quality determined during mixing and fermentation. During conveying, proofing and retarding, the products must be threated in a gentle way under very accurate temperature and humidity conditions. After proofing and retarding, the products increased significantly in size and became extremely fragile. Getting the products off the peel board undamaged, may be described as an art. An art we practice daily! 🧩 #Bunline #Buns #Rolls #Processing #Handling #DoughFriendly #Art #BakingIndustry #BakeryEquipment

Have you yet to master the perfect poached egg? Here’s our foolproof recipe, all you will need is: 🥚1 tbsp white wine vinegar 🥚As many eggs as you wish to poach To make: 1️⃣ Fill a large saucepan or deep frying pan with water and add the vinegar. Bring to the boil, then turn the heat down to a simmer. 2️⃣ Crack the egg into a small bowl. You could use a fine strainer to all the runnier egg white to drain off. 3️⃣ Stir the water to create a gentle whirlpool. Then carefully slide the egg into the water. Make sure the heat is low enough not to throw the egg around. Note: there should only be small bubbles rising. 4️⃣ Cook for 3-4 minutes, until the white is cooked through. 5️⃣ Use a slotted spoon to remove the eggs and blot any water from the base on a clean tea towel or kitchen towel. You can add more than one egg to the pan, just make sure there is enough room. And that is all you need to do, to make the perfect poached eggs! Make sure to save this for later 🥚

Leftover bread can be transformed into a versatile ingredient known as breadcrumbs. 🍞 This eco-friendly repurposing technique prevents food waste and adds a delightful texture to your homemade meals. 🍲 To create breadcrumbs, dry the leftover bread in the oven or air fryer until it becomes crispy. Then, crush it into fine crumbs using a rolling pin, food processor, or even your hands. Use these breadcrumbs to coat meat or fish before frying, add texture to meatballs or burgers, or even thicken sauces and soups. 🥩🐟 #foodrepurposing #sparebasketsfood #foodrescue

Butternut Squash Recipe Instructions: 1. Heat oil over medium heat in a large saucepan. Add the onion, then cook and stir until tender. Add the garlic and cook for one minute more. 2. Stir in the squash, broth, salt and pepper. Bring the mixture to a boil, then reduce heat and simmer, covered, until the squash is tender. This should take about 10 to 15 minutes. 3. Use an immersion blender to puree the soup right in the pot. Alternatively, cool the soup slightly and puree it in batches in a standard blender. 4. Return the pureed soup to the pan and add the cream. Cook and stir until heated through. 5. Serve soup in bowls and, if desired, garnish with additional heavy whipping cream and crispy sage.

◾1. Whisk the dry ingredients in a bowl: 2 tablespoons cream of tartar, ¾ cup salt, and 2 ½ cups flour. ◾2. Add 1 ¼ cups boiling water and ¼ cup vegetable oil by using a spatula. Tip: Water must be boiling so that your dough remains soft and will not crumble even after weeks. ◾3. Knead the dough with your hands after it is cool enough. It will harden during this process. ◾4. After placing the dough on a surface, add food colouring as you continue kneading. Playdough can last up to 1.5 months. Preserve it in a container at room temperature. 🔍✨How it works: Salt prevents the growth of bacteria and increases shelf life. The ingredients react to the heat of boiling water and hand-kneading, so the dough gains elasticity. 📩 info@highlearn.co.uk 📞 +44 020 8432 0830 📱 WA: +44 7850 694488 #DIYPlaydough #HomemadeFun #GetCreative #HighLearn
