That’s correct! Italy is indeed known for its rich diversity of olive trees, with over 538 cultivars. These cultivars, a term derived from Latin meaning ‘cultivated variety’, each produce their own unique variety of olives. Most of these olives are used for oil production, but some are also suitable for direct consumption and are known as table olives. These table olives are often enjoyed for their distinct flavor and texture. The process of extracting oil from the olives is known as percolation. It’s a special process that ensures the rich, flavorful oil is efficiently extracted from the olive paste produced by crushing the olives. It’s fascinating how each cultivar can produce such distinct flavors and characteristics in their olives and resulting oil. Poggiolecci has received the top prize from the Slow Food panel for its OliVi Forte organic extra virgin olive oil: Grande Olio Slow. We are so proud to be receiving this amazing recognition of our hard work and the work of our press, FRANTOIO ROSSI . It is all the more special at it is a monocultivar or single-variety olive oil made with only our Frantoio olives, from the young trees that we planted in 2005 but of which many had to be cut to the bone or replaced in 2019 after 3 nights of frost in February 2018 killed them. This is a heirloom variety from Tuscany, all our trees are also certified IGP Toscana and the oil is certified organic and cold extraction, which is no simple thing when you harvest in a changing climate when it is still summer with 30 degrees outside. We are sometimes asked whether we grow green or black olives, as if the colours represented two different varieties rather the maturity of the fruit: every olive will turn from green to black as it ripens. When you spend as much time staring at olives as we do though, you start to appreciate the full spectrum of shades that an olive turns as it ripens in the sun. At harvest time, a single tree can have fruit in a variety of jewel-like tones: vibrant, acid green; blush pink; dusky mauve; rich, cherry red; glossy black. For olive farmers, monitoring the colour of the olives is a serious business, the crucial indicator that it’s time to begin harvesting. Firm, green or mauve-tinged olives will yield a small amount of strong-tasting oil; squishy cherry-red or black olives will produce a larger quantity of mild flavoured oil. We picked ours when inviatura (the colour change) has just started, to get a strong, spicy flavour. Table olives are an entirely different story – most olives that appear black in tins or jars were actually picked when they were green, unripe and still firm enough to withstand industrial processing. They are then oxidised and treated with preservatives during the lye (caustic soda) curing process to ensure a dark, uniform colour. Ripe black olives which are naturally less bitter than unripe olives, are usually processed using more traditional methods, such as salt-curing, brining and dehydration. Most of our olives have now been milled and the precious oil extracted, but we have left a few on the trees to darken, which we will pick later for curing and eating as table olives.

USDA’s “Vegetable and Pulses Outlook: December 2023” reports that export volume for several organic vegetables from January–October 2023 fell for many commodities including broccoli, cauliflower, celery, romaine lettuce, spinach, and peppers. While many FOB prices for organic vegetables like crown cut broccoli, kale, and romaine lettuce are down in October–November from last year, organic carrot prices have mirrored the conventional market with prices trending upward in the late fall of 2023. Meanwhile, organic carrot exports increased 7.6%; and since 2017 annual organic fresh carrot exports accounted for 31 percent of total carrot export value and 25 percent of volume.
