That’s correct! Italy is indeed known for its rich diversity of olive trees, with over 538 cultivars. These cultivars, a term derived from Latin meaning ‘cultivated variety’, each produce their own unique variety of olives. Most of these olives are used for oil production, but some are also suitable for direct consumption and are known as table olives. These table olives are often enjoyed for their distinct flavor and texture. The process of extracting oil from the olives is known as percolation. It’s a special process that ensures the rich, flavorful oil is efficiently extracted from the olive paste produced by crushing the olives. It’s fascinating how each cultivar can produce such distinct flavors and characteristics in their olives and resulting oil.
