❓️Can craft ever be wrong? ❌️ No ➡️ How you make your spirit is up to you. It might taste awful but is not wrong. ➡️ The botanicals you use, there is no right or wrong. Add what excites you. ➡️ How you distill is up to you. Take your time or turn the heating sticks right up and have an early finish. ⚠️ but it can be wrong if you don't have a go and make it yourself. ✅️ Craft distillers don't borrow gin from a big distillery and stick a label on it. ✅️ Craft distillers are more than just marketeers. ✅️ Craft distillers start with ingredients and finish with a bottle. Why Stillgarden Distillery is the Secret Ingredient to a Perfectly Spirited Day! Let’s talk about Stillgarden Distillery – the place where magic happens, and no, I don’t mean they teach you how to pull rabbits out of hats (unless it’s a really, really big hat). I’m talking about the kind of magic that turns ordinary days into extraordinary adventures with just a splash, a dash, and a whole lot of Irish charm. First things first, if you haven’t been to Stillgarden, you’re missing out on one of Dublin’s best-kept secrets. Nestled in the heart of Inchicore, this distillery isn’t just a place where spirits are made; it’s where spirits are *lifted*. Picture Willy Wonka’s chocolate factory but for adults – and instead of chocolate, there’s gin. Glorious, aromatic, perfectly crafted gin. Now, you might wonder what makes Stillgarden’s gin so special. Is it the botanicals they use? The artisanal craftsmanship? The fact that each bottle is blessed by a leprechaun before it leaves the distillery? (Okay, that last one might be a stretch, but who knows?) What truly sets Stillgarden apart is their community ethos. They don’t just create spirits; they cultivate connections. With their Social Botanist Project, they invite locals to grow and donate botanicals, making every bottle a true labor of love and community spirit. It’s like a neighborhood potluck, but with gin. And honestly, isn’t that the kind of potluck we all want to be invited to? But let’s not stop at gin. Stillgarden’s product lineup is as diverse as it is delightful. From their fresh and zesty Irish Vodka to their innovative range of modern Irish spirits, there’s something for everyone. And if you’re feeling adventurous, their Distillers Edition series is a must-try. It’s where their distillers let their imaginations run wild, resulting in unique, limited-edition creations that you’ll want to savor down to the last drop. And speaking of savoring, let’s not forget the cocktails. Stillgarden isn’t just about sipping spirits neat (though you can definitely do that if you’re a purist). They offer masterclasses that turn you into a mixologist, ready to impress at your next gathering. Trust me, once you’ve had a Stillgarden cocktail, you’ll wonder why anyone bothers with those pre-made mixers. It’s like comparing a symphony to someone banging a pot with a spoon. So, whether you’re a gin aficionado, a cocktail enthusiast, or just someone looking for a good time, Stillgarden Distillery is the place to be. Pop in for a tour, stay for a tasting, and leave with a bottle (or three) of joy. Because at Stillgarden, they’re not just distilling spirits – they’re distilling happiness, one bottle at a time. Cheers to that.

🍾 Champagne Taittinger is voted in top 10 of The World's Most Admired Champagne Brands 2024 by Drinks International "Taittinger is another famous, family-run business in Champagne that has performed consistently well in our Most Admired survey – it has never been outside the top 10 brands. One of its great strengths, particularly important at a time when grape prices continue to rise at a frightening speed, is its considerable vineyard ownership that covers some 288ha, making it the third largest domaine in the appellation. There’s a lot going on at the house currently, with the renovation of the historic cellars on the outskirts of Reims, where there’s a grouping of the finest, deep chalk crayères (including Ruinart, Veuve Clicquot and Pommery) on land that used to be outside the ancient town walls. They are due for completion and reopening later in 2024. The range of wines at the house remains unchanged and, given the very large vineyard resource available to winemaker Alexandre Ponnavoy, who has had the keys to the cellar door since 2018, we might perhaps expect to see something happening in the premium brut-sans année market here too. It is true that in the premium multi-vintage sector the house already has three offerings in the shape of the Grands Crus Prélude, the sweeter (sec) Nocturne that has a 17.5gm dosage and is now also available in a pink version – both designed for late-night drinking – plus the single vineyard Folies de la Marquetterie in Pierry just outside Epernay, but there’s surely room for more innovation. Champagne purists might argue that protecting production of prestige line Comtes de Champagne should remain the priority, and tasting the latest 2013 release it’s hard to argue with that logic. Made from five top Côte des Blancs Grands Crus – Avize, Chouilly, Cramant, Mesnil-surOger and Oger – where the family has enviably large vineyard holdings, Comte 2013 nicely captures the freshness, concentration, and vibrancy of this vintage. The long finish shows what you will be missing if you don’t have another bottle (at least) tucked away for future contemplation. Experts like Oliver Dixon from Le Clos - Finest Wines & Luxury Spirits and Younes Zarqoun of 111 MANAGEMENT Group highlight the impact of COVID-19, contributing to this growth with an influx of new restaurants averaging 130 openings annually. This has increased the demand for New World wines and specific champagnes. Despite higher prices, there’s also a rising interest in natural and organic wines. Restaurants in Dubai are adapting to wine trends, employing full-time sommeliers and adopting new pricing strategies. A short write up on #Champagne in two posts. Part 1: Champagne is a huge success story, historically having developed a unique wine style in a region that is challenging for grape growing: Champagne's climate is continental with cold winters, hot summers, and sometimes high levels of humidity. Making sparkling wine in this region was likely born from viticultural necessity; transforming the wines of Champagne into a celebratory luxury good was pure marketing genius. As with all places on Earth, climate change is altering growing conditions, possibly for the better in the case of Champagne, providing more control to winemakers and more consistency between vintages. Additionally, it is not surprising now to see still wines coming out of Champagne, especially Pinot Noir that can offer an alternative to nearby Burgundy and that are generally bottled under the name “Coteaux Champenois”. There are around 84,000 acres under vine in the Champagne appellation, across 320 villages or crus – 17 of which are Grand Cru. There are more than 280,000 plots supervised by 16,000 growers, making Champagne a complex mosaic of vineyard ownership and grower associations. While there are more than 2,000 Champagne houses, just 100 account for more than two-thirds of all Champagne sales – and 90 percent of its exports. The control of the market by the big "Maisons" has been challenged over the past 25 years by exciting smaller producers, often referred to as Champagne "Growers". This denomination emphasizes the contrast between the Houses, which usually purchase most of their grape supply (this is identified on the label by the acronym "NM" for Négociant Manipulant). and the Growers (identified on the label by the acronym "RM" for Récoltant Manipulant) that own their own grape production. The sourcing strategy is not important to the style of the Champagne, at least not as much as the entrepreneurial spirit of the Growers who have done much to differentiate themselves by developing terroir-specific Champagne and deploying new practices. Their influence on Champagne styles (zero dosage, for example), terroir-based cuvées highlighting different villages, and viticultural practices has been so great that the Houses often look up to them for inspiration. The Champagne winegrowing and commercial ecosystem is one of the most fascinating to study. Champagne is the reference region for méthode traditionnelle sparkling wines. As such, it has codified its grape growing and winemaking to a great extent and sets the bar on how to develop a luxury wine region regardless of the style. Indeed, everything is controlled in Champagne: vineyard yields, yields at pressing, time on lees, pressure in the bottle, how much inventory can be put on the market, who can use the name Champagne, and many more details. Champagne wines have at least 5 atmospheres of pressure, a high level of autolytic character, a certain chalky minerality with a fine mousse and vigorous acidity.
