Researchers around Prof. Regine Eibl and Prof. Tilo Hühn from the Zurich University of Applied Sciences (ZHAW) have succeeded in producing chocolate from cocoa cell cultures in single-use bioreactors! 𝐓𝐡𝐞 𝐒𝐰𝐞𝐞𝐭 𝐒𝐜𝐢𝐞𝐧𝐜𝐞: The ZHAW researchers have isolated cells from cocoa beans and propagated them in bioreactors while scaling-up to pilot production. This method enables a sustainable and controlled production independent of traditional cultivation methods! 𝐒𝐡𝐚𝐤𝐞𝐧 𝐧𝐨𝐭 𝐒𝐭𝐢𝐫𝐫𝐞𝐝: Kuhner's orbital shaken bioreactors have proven to be very successful (among others), scoring with ease of scalability, user friendliness and low shear forces. I had the pleasure to taste the cultured chocolate at ZAWH and it had a very good and fruity flavor. I'd definitely buy it if I would find it at my local store. It would be great if a part of the profits were used to help the traditional cocoa farmers.
