Kalette - Food is Medicine I have a new favorite vegetable! The Kalette is a kale-brussels sprout hybrid, and as both are from the brassica cruciferous vegetable family - is jam packed with sulforaphane an anti-cancer phytochemical as well as Vit C and K and fiber. I only see it in stores and markets a few times a year so gobble them up when I can. Use as you would kale in salads, or sautee as you would a brussels sprout. Popular Kenyan wheat-based #snacks and #convenientfoods such as mandazi, chapati, bread and biscuits have been receiving negative publicity due to their high-calorie low-nutrient status. You may know a person who's been trying to reduce wheat intake or entirely live #wheatfree. At the #KALRO Beef Research Institute #Lanet, the pasture and value addition departments prepared high-protein #glutenfree composite flours of sorghum, millet and teff as alternatives to wheat. The snacks are rich in body, flavour and nutrition...very filling too. Promotion of these #climatesmart #nativecrops and their utilisation in snacks and convenient foods is one way of enhancing our #foodsecurity, #nutritionsecurity as well as sustainably transitioning our #foodsystems. In this day and age where the general public are more mindful about what they put into their bodies, we have to adapt and ensure that alternatives are always available for them. We are seeing a lot of our guests opting for alternative plant-based milk instead of cow’s milk for health and ethical reasons. There are also plant-based versions of almost every item on our breakfast menu. If you are running an establishment, have you caught on this food evolution yet? Perhaps it’s time to consider. After all, you are really what you eat.

🚨Bad science reporting alert🚨 Study finds chips, fizzy drink, cookies & beer are bad for health (shock!) --> reported as "plant-based alt-meat worse for health than meat" BUT plant-based meat was only 0.2% of the food consumed in the study, and was unfairly lumped in with things like chips/fizzy drink/cookies under the unhelpful NOVA system of classifying ultra-processed foods. NOVA is not a very helpful or reliable indication of the health of foods e.g. tofu is classified as ultra-processed, but beer/wine are unprocessed - but tofu is obviously not less healthy than beer/wine. Studies which disaggregate alt-meats from unhealthy ultra-processed foods like processed meat, fizzy drinks and cookies usually find that alt-meats are healthier than meat, though there's big variation between products. Whether it’s sauerkraut or other lacto-fermented vegetables, kimchi, or yogurt, fermented foods are a truly wonderful thing - and super fun to make (my favorite thing to ferment is a big batch of jalapeños)!
