Happy World Plant Milk Day! Do you factor sustainability into the milk you use, or the milk(s) provided at your office coffee station or cafe/restaurant? Do you have a favorite? It's no surprise that cow's milk is far less sustainable than all the plant milks available, but which plant milk is the most sustainable? There is some variation in the data available when additional factors are applied like land use and deforestation, GMOs, pesticides, packaging, and transporation to the consumer; but we started with water use and emissions in production. 15 years ago, I switched from cow's milk to almond milk. Then I learned about how much water it took to produce and the devastating impact on bee populations, and I switched to oat milk. I've switched again, to soy milk. The impact may be small, because I only drink milk in my coffee, but it's one of hundreds of decisions I make every day with a cumulative environmental impact that was easy to change.
