Sometimes it's hard to find affordable options, especially when switching to a healthier, whole food diet and with ongoing inflation. A whole food, plant-based diet can provide affordable, yet nutritious and delicious foods. It's crucial to understand that food miles, while less relevant from a carbon perspective, hold significant importance from a nutritional standpoint. Eating foods that are in season and locally sourced makes the most sense nutritionally, as they offer the highest nutritional value and are tastier when enjoyed in their peak season in your region. #CO2 Impact: When it comes to the carbon footprint of our food choices, transportation plays a relatively smaller role compared to production. The primary contributor to a food's carbon footprint is its production process. Opting for foods with lower production-related emissions can significantly reduce the overall CO2 impact of our diets. #Nutritional Impact: Choosing foods that are in season and locally sourced ensures optimal nutritional quality. Foods that are harvested at the peak of ripeness and consumed shortly after retain more nutrients compared to those that have traveled long distances or been stored for extended periods.
