Pesto, but not as you know it… Originating in the Italian city of Genoa, Pesto is a raw sauce or condiment traditionally made with Basil, Garlic, Pine Nuts, Parmesan Cheese and Olive Oil. The name Pesto means to crush or pound, a reference to the way the ingredients were prepared with a pestle and mortar. Nowadays there are many varieties of Pesto made with ingredients such as sun dried tomatoes, chillies, watercress, kale and even peas. The original recipe with Basil and Parmesan, however, will always be referred to as Pesto alla Genovese. This is Wild Garlic Pesto with Toasted Hazelnuts made with the remainder of my foraged wild garlic leaves. Add Parmesan to the chopped leaves and hazelnuts and blitz in a blender or food processor, slowly adding olive oil until you have the desired consistency. Finish with lemon juice and seasoning to taste. The result is a vibrant green Pesto with a pungent and earthy flavour. It is utterly delicious!
