Fribourg Agri&Food between tradition and ambition. This is episode 5 (6 more to come) where I touch upon the vibrant start-up scene, the valorisation of biomass and its outcome in new polymers, materials or molecules (Bloom Biorenewables, Seprify), and the lighthouse programs we have set up to dynamize the Fribourg Agri&Food sector. 🍎 Action Lab on the True Cost of Food: Mobilizing Key Stakeholders to Transform the Swiss Food System 🍎 How much does our food really cost? Certainly more than what we pay for it. The food and agriculture industry has a heavy impact on nature, biodiversity, and climate; and it is associated with a number of societal ills such as underpaid labor, as well as public health externalities. What if we could include these hidden or exogenous impacts into the cost of food? Last week, we organized an Action Lab with key actors of the Swiss food system to discuss the implications of implementing the True Cost Accounting for Food in Switzerland. This Action Lab is part of a larger research project coordinated by an interdisciplinary consortium (HEC Lausanne - The Faculty of Business and Economics of the University of Lausanne Unisanté EPFL (École polytechnique fédérale de Lausanne) Center for Corporate Responsibility and Sustainability Centre for Development and Environment (CDE), University of Bern , BFH-HAFL )committed to shifting incentives towards more sustainable, healthy, and fair food for all.
