Cucumber, Grape, Avocado & Mint Salad 7 ingredients · 10 minutes · 4 servings Notes: Leftovers: Refrigerate in an airtight container for up to two days. Serving Size: One serving is equal to approximately one cup. Additional Toppings: Basil and hemp seeds. Ingredients: 1/2 Lemon (juiced) 1 tbsp Extra Virgin Olive Oil 1/4 tsp Sea Salt 1 Cucumber (medium, chopped) 1 cup Grapes (halved) 1 Avocado (medium, diced) 1/3 cup Mint Leaves (chopped) Directions: 1. In a large bowl, whisk together the lemon juice, oil, and salt. 2. In the same bowl, add the cucumber, grapes, avocado, and mint leaves. Toss to combine with the dressing. What’s for dinner? Tonight is my brown rice bowl! It’s easy, nutritious, quick to assemble, I use whatever I happen to have around and throw it in the bowl! If you want to follow along! 🍽️ 😋 Ingredients: - 1 cup organic brown rice - 1 cup broccoli florets - 1 cup shredded Brussels sprouts - 1/2 cup diced onions - 1/2 cup shredded carrots - 1/4 cup raisins - 1/4 cup tofu crumbles - 2 tablespoons mixed seeds (e.g., sunflower seeds, pumpkin seeds) - Olive oil for sautéing - Salt and pepper to taste Instructions: 1. Cook the brown rice according to package instructions. 2. While the rice is cooking, steam the broccoli and Brussels sprouts until they are tender but still vibrant. 3. In a pan, sauté diced onions in olive oil until they become translucent. 4. Add shredded carrots to the onions and sauté for a few minutes until they soften. 5. Once the rice is ready, assemble your bowl by layering the rice as the base. 6. Top the rice with steamed broccoli, Brussels sprouts, sautéed onions and carrots. 7. Sprinkle tofu crumbles, raisins, and mixed seeds over the veggies. 8. Season with salt and pepper to taste. 9. Drizzle a bit of olive oil over the bowl for added flavor. 10. Craving a yummy + healthy soup? We've got you covered! Directions: Heat coconut oil in a large pot over medium heat. Add onions and sauté until golden (about 5 minutes). Add garlic and stir for another minute. Add vegetable broth to the pot. Stir until producing a light steam. Add the broccoli florets in with the mixture and let steam for 5 minutes or until broccoli is bright green. Add salt to taste. Add coconut milk and stir well. Add spinach and kale. Stir just until the greens are wilted and remove from heat. In your food processor or magic bullet, blend the soup until smooth. If you are using a blender, ensure to remove the middle piece of the lid to allow steam to escape. Transfer blended mixture back into a large pot. Warm to desired temperature. Ladle into bowls. Drizzle with a splash of olive oil, lemon juice and garnish with avocado slices.
