Peter Thickett offers sharp insights on how NoLo beverage brands can enter the luxury segment: 1. Don’t Obsess over Alcohol Content Lack of alcohol should not be the primary talking point. The drink should be able to stand its ground with its flavour, ingredients, and process alone. 2. Prioritise Precision Be specific about where the ingredients come from – not just the country, but the region, the farm, the woods, the field. Describe the liquid with the finesse and detail of a sommelier to emphasise its pairing potential. 3. Foreground the Maker Where desirable, celebrate the genius of the ‘maker’ behind the drink, to drive trust and credibility. Use their personality and industry pedigree as a way to build more intimate relationships with the discerning drinks consumer. 4. Build a Mythology: Whilst the drink may not be hundreds of years old, the place that it comes from may well be. Use the stories of the land and its people to build a modern mythology around the drink that adds a layer of mystique and romance. 5. Emphasise Rarity Scale reduction is a sure-fire way to drive covetability. Create liquid expressions in limited batches, with ingredients available for a restricted time window to create a sense of scarcity. 6. Utilise Aging Techniques In the world of alcoholic drinks, time is value. Borrow techniques from wine and spirits, like cask-aging, sea-aging, and high-altitude aging, to pre-empt the expectations of the discerning future non-alc consumer.

Booze isn’t the cash cow it used to be for hotels. Gen Z is drinking less, and there’s no way around it. Blame it on health obsessions, overpriced cocktails, or weed stealing the spotlight - whatever the reason, the numbers don’t lie. Alcohol consumption among 18-34-year-olds has dropped 10% in 20 years. That’s a serious dent when alcohol sales can make up 25% of hotel F&B revenue. So what now? Cry into your overpriced martini? No. Adapt or die. Mocktails are taking over, but don’t roll your eyes. We’re not talking about sad juice boxes. These are $18 Instagrammable concoctions that scream sophistication - local ingredients, sustainability, and a narrative that makes Gen Z feel good about blowing their cash. They don’t want drinks; they want stories in a glass. If you’re not charging premium prices for zero-proof drinks that taste like they cost $30, you’re leaving money on the table. But let’s not sugarcoat it: this isn’t just about drinks. The whole “wellness” movement isn’t a trend; it’s a lifestyle. Vegan, flexitarian, adaptogenic mushroom teas? Yeah, they’re a thing now, and if your menu doesn’t cater to this clean-living cult, you’re officially behind. It’s not just food; it’s a moral statement. Guests want to feel like they’re saving the planet with every sip and bite. Forget just serving booze and burgers. You’re in the business of selling belonging. Gen Z is paying for spaces where they can feel seen, be healthy-ish, and post about it later. And if you’re still pushing tired ideas instead of reinventing your offerings, guess what? You’ve already lost them. It’s time to stop chasing trends and start creating them. Show you care. Make it bold. And for the love of everything, ditch the boring, safe options. It may be dry January, but N/A companies are repositioning to take over the nightlife scene year-round. 🍻 Alcohol-free drink brands are becoming the new go-to at hot spots around the country thanks a cultural turn toward moderate alcohol consumption, sophisticated packaging, and the return of nightlife: a new market which N/A's are very much tapping into. So how do they secure a party invite? Look to Ghia, which is broadening its positioning from a "better for you" drink to one that "should be part of the party," Ghia founder Melanie Masarin says; just as juicy a hosting gift as the usual bottle of wine. The brand's creative assets emphasize an ease and glamor to the drink. Pair it with a cigarette, it suggests, or in a tumbler at sunset. There's a new "aura of a laissez-faire, upscale European bistro-culture infused, permanent vacation approach to socializing—one that doesn’t depend on a holistic, puritanical understanding of wellness but instead a realistic understanding that vices exist, and some are indulged in while others are eliminated," writes Evan Nicole Brown.
