Cottage Cheese Protein Pancakes - - 1 heaped cup (250g) cottage cheese - 3 eggs - 1 tsp. of vanilla extract - 1 tbsp. of coconut sugar - 3 heaped tbsp. flour (regular or gluten-free) Place the cottage cheese into a bowl, add egg yolks (keep the whites separate) and crush everything with a fork. Add in the flour, and mix thoroughly. Whisk the egg whites into a stiff foam and add to the cheese mixture, gently combine the ingredients. Heat a dry, non-stick pan and fry the pancakes (about 2 tbsp. of batter per pancake) in batches, for about 3 mins, until the bottom is slightly browned. Turn and cook for another. 2 minutes. Recipe courtesy of @flavcity 🙌🏻 INGREDIENTS 5 eggs 0.5 cup shredded gruyere, swiss, or cheddar 0.25 cup full fat cottage cheese @good_culture 0.13 teaspoon kosher salt Couple cracks of fresh black pepper 2-2.5 slices of sugar free bacon 🌟cook the slices of bacon before making the egg bites. 🌟Preheat oven to 350 degrees F and place a baking dish that is filled with 1 inch of water on the bottom rack. 🌟Add the eggs, cheese, cottage cheese, salt, and pepper to a blender and blend on high for 20 seconds until light and frothy. 🌟Spray a muffin tin with a little non-stick spray and fill the tins almost all the way to the top with the egg mixture. 🌟Divide the chopped bacon equally among all of the muffin tins and bake in the oven for 30 minutes, or until the center of the egg bites are just set. 🌟Remove from oven and let cool for 5 minutes. Cheesy Pesto Fried Eggs Follow iupilon This has become a favourite got-to breaky ready in a few minutes for an easy meal! I’ve whipped it up with the classic Genovese Pesto Barilla here or switch it up with the Vegan or Chilli Basil Pesto. Ingredients: 2 tbsp pesto 2 free-range eggs Salt/pepper 1/3 cup grated cheddar cheese 2 pieces toasted sourdough ½ avocado Basil to serve Method: Place a small frying-pan over a medium/high heat and add the pesto. Let it begin to fry, spreading it out, then add the eggs, season and add the cheese over the eggs. Cover let cook to you liking.
