🌱🍔 FOODSERVICE EMBRACES WHOLE-FOOD With health and nutrition top of mind for consumers, whole-food plant-based products have been cropping up across the globe in the foodservice world. In the latest instance, Colorado-based companies Smashburger and jack & annie's have linked up to launch a new burger spotlighting the latter’s jackfruit-based meat. The collaboration marks the fast-casual debut of Jack & Annie’s – whose products are already available in over 5,000 locations across the US, including Whole Foods, Safeway and Target. Smashburger will add its jackfruit patty as a permanent menu item across its 235 locations nationwide. Its partnership with Smashburger signals two opportunities. First, long-standing whole-food plant-based meat brands like Jack & Annie's parent The Jackfruit Company might be able to find success with consumers looking for such options. This includes the likes of Upton's Naturals, NoBull Burger and Big Mountain Foods. Second, it’s a marker of the growing prevalence of the whole-food plant-based trend in foodservice. Just earlier this year, Dave's Hot Chicken released its first meat-free options with cauliflower sliders and bites, and Hard Rock Cafe in Broadway introduced a Veganuary menu with cauliflower wings and a mushroom primavera pasta. Chipotle Mexican Grill’s braised tofu (Sofritas) and Shake Shack’s veggie burger also come to mind, as does Chipotle founder Steve Ells' new chain Kernel whose menu is focused on whole foods too. This is a trend being seen internationally as well. In the UK, Veganuary saw a whole-food plant-based boom. Burger King brought back its black bean burger, wagamama and Pret A Manger spotlit mushrooms, Leon went all-in on gut health with a bhaji wrap, while PizzaExpress introduced a veggie-packed calzone and Zizzi Restaurants’ new Rustic pizza featured Fable Food Co’s pulled shiitake mushrooms. #GreenQueen #altprotein #plantbasedprotein #futurefood

Don't kill your customers with donuts. This is another great example of how you could kill a customer if you say a product is #vegan &/or #GlutenFree and it isn't. This so-called vegan & GF bakery supplied a food market with donuts (with sprinkles whose ingredients could not be identified) that could have been from Dunkin. Levels of food processing 📶🍽️ 📌Food processing can be categorized into several levels based on the extent to which the original food product has been transformed. Here are some common levels of food processing💁🏻♀️: 1️⃣Minimally Processed Foods: These are foods that have undergone minimal processing and are often consumed in their natural state or with minimal alterations. Examples include washed and packaged fruits and vegetables, bagged salads, and pre-cut meats.🥗 2️⃣Basic Processing: Foods at this level have undergone some processing steps, such as washing, cleaning, grinding, or packaging, but they still retain their original characteristics. Examples include roasted nuts, ground coffee, and packaged spices.☕️ 3️⃣ Preservation Processing: Techniques like canning, freezing, drying, or pasteurization are commonly used to extend shelf life . Examples include canned fruits and vegetables, frozen fruits and vegetables, dried herbs, and pasteurized milk.🥫 4️⃣ Ultra-processed Foods: Ultra-processed foods are typically heavily modified and contain numerous additives, preservatives, and artificial ingredients. They often have a long list of ingredients and are associated with a higher risk of health issues. The May frozen category reset just launched at Whole Foods Market and the innovation this round is 🔥! These are a few of the new products I'm excited about in the meat department: 1. Simek's Mini Beef Meatballs: I love these delicious mini meatballs because they open up new options to use meatballs, from soups to frittatas to appetizers. They are perfect for kids (and parents) in reducing choking risk and enabling kids to feed themselves without additional chopping. I'm also excited to kickoff our partnership with Simek's as a new supplier to Whole Foods Market with so many shared values in being plastic neutral, a Certified B Corp, and donating a meal to Feeding America with every purchase. Teton Waters Ranch Mini Corn Dogs: Corn dogs in the market today are targeted towards kids but are largely junk food with little nutritional value. Embracing the food wisdom of our Ancestors After understanding the importance of seeds/ grains such as sprouts, micro-greens, and homegrown produce, the next step is to understand the importance of eating RAW. Many food items can be consumed raw for their nutritional value. Some common items are:   1)     Fruits: Apples, bananas, berries, oranges, grapes, mangoes, kiwis, pineapples, watermelons, etc. 2)     Vegetables: Leafy greens like spinach, lettuce, and kale, as well as carrots, cucumbers, bell peppers, tomatoes, celery, broccoli, cauliflower, radishes, etc. 3)     Nuts and Seeds: Various nuts like Almonds, walnuts, cashews, pistachios, peanuts, and seeds like sunflower seeds, pumpkin seeds, chia seeds, and flaxseeds, etc. can either be eaten or added to drinks like smoothies. 4)     Legumes: Some legumes, such as peas, green beans, and snap peas can be eaten raw. 5)     Herbs and Leafy Greens: Fresh herbs like parsley, cilantro, basil, mint, and dill can be used raw to flavor dishes. Some leafy greens are eaten raw in salads such as arugula and watercress. 6)     Dairy and Dairy Alternatives: Some dairy products like cheese and yogurt can be consumed raw, while some non-dairy alternatives such as almond milk, coconut milk, and soy milk can also be consumed raw. 7)     Seafood: Certain types of seafood can be eaten raw but with a lot of precaution. The most common examples are sushi-grade fish like salmon and tuna. 8)     Eggs: Consuming raw eggs carries a risk of salmonella contamination. Still, raw eggs are sometimes used in dishes like steak tartare, Caesar salad dressing, or certain desserts These are a few food items that can be eaten raw. However, one should strictly listen to one’s own body while deciding the consumption of raw food items as each body reacts differently to different food items.  It's also important to be mindful of food safety guidelines while making such decisions, especially about animal products/dairy products. In the case of store-bought items like fruits and vegetables, these should be thoroughly washed and sterilized before raw consumption.
