Ethai Café, Shanghai – China Tucked away in the busy commercial basement of Shanghai’s Kerry Center, Ethai Café offers a fresh take on traditional Thai cuisine, focusing on simple light dishes created from healthy ingredients. The earthy color and material palette is based on gradients reminiscent of central Thailand’s archaeological sites and lands, and its nooks and sitting areas appear to have been carved out of the rammed earth that envelops the façade. Given the secluded and constrained nature of the site, we imagined a space that could provide a peaceful and transient retreat from the hustle and bustle of city life. In order to achieve this, the project follows the directional concept of an enveloping geometry. Consequently, the facade is willingly designed give a slight cut to the space from the public area, through a lowered ceiling and a low wall, unfolding like a ribbon from within the restaurant and draping the exterior. An opening of the low wall, which reveals a banquette on the inside, creates an inviting entrance, naturally guiding customers into the space. These volumes are slightly offset from the site boundaries, enforcing this feeling of “space within space”. The layout gives customers a certain level of privacy, while still feeling somewhat connected to the rest of the public space. Overlooking the customers stands a dome-shaped ceiling, formed by a grid of wooden beams, in which conceals the space’s lighting. This structure defines a vaulted space that feels private yet convivial, like a contemporary interpretation of the primordial hut. The material selection further enhances this idea of quiet sobriety by deploying a palette rich in earthy tones and alternating rough and smooth textures. Welcomed by the rammed earth gradient at the entrance, the customer then notes with interest the coarse terrazzo flooring that guides them into the space. Lifting further their eye-level, they will discover a rich texture on the vertical surfaces, covered by white arched tiles. Simultaneously, the environment feels natural from the wooden surfaces on the furniture and the grid ceiling, as well as the vegetation. Finally, pieces of artwork constitute different focal points of the restaurant, bringing a traditional Thai touch and finalizing the integrality of Ethai Café. Domó Sushi, Milan – Italy     In the 1,500-square-meter restaurant project, divided into two floors, the interiors were designed by interior designer Ashley Gadeova based on the space layout created by the Naos architectural firm, which also supervised the renovation work, which took five months to complete. The inspiration is that of an international venue, grand and scenic already from the luxurious atrium, as the central hall appears after passing through the essential open entrance in the period façade. Candles as scenic backdrops lean over the central aisle traversed by the soft curvilinear shapes of the custom-made sofas arranged in a serpentine pattern surrounding the tables. The palette chosen is composed of natural and warm tones that play with sand, earth, travertine, rust and wood. At the end of the corridor, a staircase leads to the DJ’s mirrored console, in front of which rises, on the same stage, a sushi counter made of split monolithic blocks of natural travertine. To the right is a large area dedicated to all the cold preparations of rice and sushi. To the left is the kitchen for the hot ones, with gas, induction and wok stations. A separate area is reserved for the cafeteria and desserts. To the left, still facing the staircase, is a second elevated room, characterized by refined backlit perforated sheet metal walls that mimic the texture of nature and leaves, enveloping several circular sofas in elegant technical velvet. These tables are dedicated to those who seek greater intimacy, without losing the ambience of the room. There are two staircases leading to the first floor, on the main one you are welcomed by a stone fountain as a reminder of the historic building: here there are also two large rooms with dining tables, a spacious wine cellar, bar-cafeteria and two small private lounges with fireplace. Not visible, all the technical spaces (changing rooms, laundry rooms, service rooms, fish cleaning) necessary to handle large volumes. The entire lighting system of the restaurant was designed according to domotics with a Dali automation system and can be fully managed from a tablet. Impressive contractor and plant works were also carried out, which included architectural works preparatory to the realization of the new activity. Five Guys UAE Dubai Airport, Dubai – United Arab Emirates The new Five Guys dining and lounge space at the Dubai Airport Terminal 3 offers travellers a refreshing escape from the airport’s bustling activity. The new interior merges Five Guys’ recognised identity with innovative, contemporary elements in the bar area. Our goal was to create a space that captures the dynamic energy of the airport and turns it into an inviting eatery in which travellers can relax and enjoy their meals. We wanted to pay homage to the Five Guys legacy – we have embraced the signature red and white hues – while introducing features that enhance the overall dining experience: you will notice that the ceiling’s LED light patterns cast a warm glow on the travellers. The sleek high stools with plush red cushions in the bar area evoke a sense of nostalgia reminiscent of American-style diners from the 1970s. The bar top, crafted from red resin with white accents, complements the colour scheme, while the base is adorned with white tiles arranged in varying sizes, mirroring the dynamic energy of the airport. The long communal table serves as a social hub; combining a wooden top inlaid with smaller white tiles and a distinctive red-tiled base, it creates a tactile atmosphere. The surrounding grey-cushioned chairs offer a sense of casual refinement. A custom-made central light hanging above reinforces the retro-inspired design. The floor around the communal table features a striking mosaic of red and white tiles, creating a visually captivating centrepiece that anchors the space. The alignment of the tiles represents the harmonious yet playful tension between innovative design and the classic Five Guys visual identity. Blending comfort and style, the booths integrate red and grey elements with a cool metal structure. Stylish wall lights and wooden tables complete the setting, making these booths perfect cocoons in which travellers can unwind. Minimalist line art created from neon light adorns the walls, featuring the iconic Five Guys logo as well as other dynamic patterns in vibrant red paying homage to ‘old’ and ‘new’ Dubai. This decor forms a key focal point, with ceiling lines directed towards it to enhance its prominence and create a dynamic visual flow. Red metal frameworks and custom light fixtures reinforce the retro yet contemporary feel, seamlessly blending still-loved classic elements from 1970s restaurants with modern aesthetics fitting for the contemporary age. Selva Restaurant, Amsterdam – Netherlands Perched on the 24th floor of the Nhow Hotel in Amsterdam, Selva Restaurant serves up Latin American cuisine with a tropical twist. The restaurant's design complements this culinary offering, blending organic shapes, natural materials and vibrant colors to create a lush, exotic experience. The space, enclosed by a strikingfloor-to-ceiling glass façade designed by the architectural team OMA, led byDutch architect Rem Koolhaas, boasted spectacular views of Amsterdam's outskirts. One of the primary challenges was transforming this space into a warm, jungle-like environment that contrasted with the city's hardness. Set against a green backdrop with organic flooring and abundant vegetation, we added textured wooden elements with undulating shapes. These elements function as benches and dividers, evoking a dense forest while adding warmth. The curvilinear pieces zone the restaurant, creating winding paths that encourage exploration and soften the space's harshness. Upon entering, guests are guided by a plant-filled ceiling and a suspended, reflective element that resembles a tropical river. This element, along with glass lamps and vegetation, adds layers and depth to the jungle-like atmosphere. Reflective finishes in metal, glass, and ceramics evoke water, complementing the glass façade and creating a tropical ambiance. Vibrant, warm colours inspired by tropical fruits, birds, and flowers, often depicted in Latin American art, enliven the space through furniture and benches. The bar's undulating front, covered in colourful tiles inspired by traditional Latin American textiles, is a central colour element. This grand bar extends from the entrance to the private dining area, energising the space with its lively activity, drinks area, and open kitchen visible from the dining room. The floor-to-ceiling glass façade, partially covered with wicker, rope, and wood panels, filters sunlight like leaves or branches, creating cozy shadows and adding warmth to the building's elegant enclosure.
