The process of whisky distillation is a complex and fascinating art, requiring careful attention to detail to transform simple ingredients like barley, water, and yeast into a rich and aromatic spirit. In the first still (the wash still), the wash is heated, causing the alcoholic vapors to evaporate and rise through the still, where they are collected and condensed into a liquid called low wines, with a higher alcohol content. Distillation is the process that concentrates the alcohol and refines the flavors of the wash. It usually occurs in two stages, using copper stills called pot stills (batch stills) in Scotland or column stills in some American and Irish whiskies. The low wines, obtained during the fermentation, are transferred to the second still (the spirit still) for the final distillation. During this stage, the distiller separates the heart (the central part of the distillate, the purest and richest in flavors) from the heads (impurities and undesirable flavors) and the tails (components that could spoil the taste).
