    Meat from Plants 🤷♀️? For many, it's a mystery 🤔? 🌏But it’s not new – cultures have been making high-protein, satisfying plant foods for centuries ... ✅Tofu (China, 2,000+ years): Made by soaking and grinding soybeans into milk, then boiling and coagulating it with natural minerals like calcium sulfate. The curds are pressed into blocks – similar to cheesemaking. ✅Tempeh (Indonesia, 400+ years): Crafted by fermenting whole soybeans with Rhizopus oligosporus culture. Over 24-48 hours, the culture binds the beans into a firm, sliceable cake. ✅Seitan (China, 1,000+ years): Also called wheat meat, seitan is made by washing wheat flour dough to remove starch, leaving behind a dense, chewy wheat protein that replicates meat. 🥘When we started Veggie Grill in 2006, we made our own tempeh and seitan in-house. Today, plant-based meat companies are modernizing and perfecting these techniques. 👉Let’s take the latest and greatest Beyond Burger IV (now made with avocado oil) as an example. It follows the same core principles as seitan – extracting, texturizing, and flavoring plant proteins to achieve a fibrous, juicy texture ... 1️⃣Protein Extraction: Pulses like 🫛peas, lentils, and beans are milled into flour. Using air fractionation and purification, proteins are separated from fiber and starch to create protein concentrates and isolates (>90% protein). 2️⃣Texturization: These powdered proteins are transformed into a fibrous texture through extrusion – a process that uses heat, pressure, and cooling to create the structure of muscle tissue, much like how seitan develops chewiness when cooked. 3️⃣Flavor & Composition: Ingredients are added to perfect taste, texture, nutrition and functionality. Specifically ...🥑avocado oil for juiciness, mouthfeel and healthy fats, and🌱small amounts (2% or less) of (i) potato starch, pea starch, and methylcellulose (a plant-based binder derived from plant fibers) to hold it together, (ii) potassium salt & lactate for flavor and freshness, (iii) natural flavors, apple extract, pomegranate concentrate, spices, vinegar, and beet juice for a rich taste and realistic color. 🍔The result? A satisfying, high-protein, cholesterol-free burger with 75% less saturated fat than 80/20 beef and no added hormones or antibiotics. Some final notes: 🦹Meat industry-backed smear campaigns have helped fuel confusion and doubt. 📓Studies continue to show health benefits of swapping out animal meat for plant-based meat (looks like lower sat fat and no cholesterol do matter). 🔎Not all plant-based meats are the same – just like nut butters or pasta, ingredients and nutritionals vary. 😇So read ingredient labels, check nutrition facts, and decide for yourself. 🫘If you're happy with beans, lentils, traditional veggie burgers, etc, great. 😋But if you love the high-protein satisfaction of meat, we now live in an age where you can get it from plants. 🥳I think that's pretty cool ... who's with me?
