For the first time, The Michelin Guide has awarded a Green Star to select restaurants in Miami, in part for eliminating seed oils from their menus! Big congratulations this Earth Day to Los Felix and Krüs Kitchen, along with the entire Grassfed Culture Hospitality team, led by Josh, Pilar, and Chef Vargas. Shifting the food system forward requires bold leadership, and we are proud to see their efforts rewarded. Our bodies and planet thank you! Across the country, there are only 29 restaurants holding Michelin Green Stars–awarded to restaurants for sustainable gastronomy that combines culinary excellence with exceptional sustainability practices throughout every step of the supply chain. Seed oils are derived from some of the lowest yielding, highest-emitting annual monocrops, and we applaud the Michelin Guide for recognizing the power of this ingredient change. Zero Acre oil is now in Dallas 55 Seventy! We chatted with Chef Josh and learned his favorite dishes to cook using Zero Acre oil are the ham and cheese tartine, crab cake, agnolotti, caviar and chips. He says “because these dishes are member favorites, they must showcase true, natural flavor among the dishes. Zero Acre oil allows us to display a clean and authentic flavor. It also makes our sauces taste more pure and lighter on the pallet. Since the oil has a more neutral flavor, it significantly affects the final taste of the end product, allowing us to showcase the dishes’ intended flavors.” In addition to great taste, Chef Josh says Zero Acre oil improves other aspects of cooking in the kitchen, “the oil has a longer fry life than seed oils and does not cause nearly as much grease build-up on our equipment. Hopdoddy Burger Bar, through a partnership with Zero Acre Farms, is making history as the first national burger chain to commit to a 100% seed oil-free menu, beginning by replacing soybean oil with Zero Acre oil in every fryer at all Austin, San Antonio and San Marcos, Texas locations. Today marks a historic moment for the fast food industry, which for too long has relied on industrial seed oils and vegetable oils as a staple ingredient of nearly every menu item. Across the world, more vegetable oils are produced annually than all beef, chicken, cheese and shrimp combined. The impact of Hopdoddy’s seed oil-free pledge is not only monumental for the industry, but also for the thousands of customers Hopdoddy feeds every day, who will not only enjoy tastier, but also cleaner and more environmentally friendly french fries, brussels sprouts, and fried chicken as a result of this partnership. As just one example of the potential impact, 44 acres of land are required to produce the amount of soybean oil needed annually for frying at one Hopdoddy location, while only three acres are required with Zero Acre oil. That’s a difference of nearly 2,000 acres – tens of millions of square feet – across all 48 Hopdoddy locations! The CO2, water and caloric savings are just as significant. We hope Hopdoddy’s seed oil-free pledge acts as a beacon for the foodservice sector, setting the standard in ingredient sourcing among restaurant chains and redefining what it means to be a responsible restaurant.
