Roasting is one of the easiest and most delicious way to prepare vegetables 🥦 All you need is olive oil, salt & pepper, a sheet pan and your oven👩🏻🍳 It brings out the natural sweetness and makes nearly any veggie taste amazing 😋 Brussels sprouts, broccoli, cauliflower, bell peppers, baby tomatoes, onions, squash, zucchini, eggplant, asparagus, potatoes, mushrooms, carrots…before you rule out a veggie, try it roasted and see what you think! Plus, it’s super simple: * Preheat oven to 425°F * Wash and chop veggies into uniform size pieces, or for added convenience, buy them prewashed and pre-chopped like I often do * Coat veggies with olive oil, sprinkle with salt & pepper, and any other seasonings you want * Arrange them on a sheet pan or baking dish - avoid overcrowding otherwise they steam instead of getting crispy * Roast 20 to 40 minutes, depending on the veggie or until desired brownness occurs * Enjoy! #NationalNutritionMonth
