🙌 FOODIE FRIDAY TIME!! 🤩 This week's recipe is all about boosting brain power and energy. 💪 If you are feeling sluggish and might need an iron boost and protein boost, this is the meal for you. Lamb is a great source of iron as are green vegetables. Drizzle a bit of lemon over the top and the Vitamin C will help you absorb the iron even more! Delicious, light and easy to prepare. If you want a dairy free version, take out the feta (I use Goats Feta as I find it better on the gut for me). Bonne Appétit PS: I found this youtube video that shows how to put it together. Busy schedule? Check out this recipe that can take you 15-30 mins to make. I make mine with tofu, I use pre cut veggies and pre cooked rice, so it literally takes me 7 mins to make the whole thing. I make extra for the next day. #quickmeals

Food Goddess Stiletto Heal©- Food to Fuel your Soul Vegetable Potato Soup 2tbsp butter 2 cups of onions, thinly sliced 3 cups of potatoes, peeled & diced into ½ cubes 1 cup of turnips, peeled 1 cup of radishes, peeled 7 cups of chicken stock Melt butter in a large pot over medium-high heat. Add onions, salt & pepper and cook for 12 minutes. Add potatoes, turnips, and radishes and cook for 8 minutes. Add chicken stock and bring to a boil, reduce heat and simmer for about 45 minutes, until veggies are tender and falling apart. Puree the liquid and veggies in a blender until smooth. If thick, you can add half a cup of chicken stock. Ladle into a warm soup bowl, you can drizzle with creme fraiche and chives, served with crusty bread. A Feast for your Senses! “Let’s Eat!” ⠀⠀

What's the simplest way to start eating more plants? SWAP + ADD method. Here's what you do… Ask yourself: What can I add to this meal to make it more plant-based? What can I swap out of this meal to make more plant-based? Not every meal needs to be swap/added. You'll drive yourself crazy! But it is a good start to thinking about making simple changes to eat more plants. Here's an example for your sandwich at lunch: -SWAP mashed chickpeas for egg or tuna salad. -ADD whole grain bread, spinach and sliced tomato.
