We have managed to sustainably reinvent a snack option using a high-tech food system Technology and analysis, which allowed us to Improve the nutrition of snacks. From Coli flower and Cocoa, Coli Coco is your health-luxative snack option. Thanks to ITMO University, БиоТех ИТМО/ BioTech ITMO, @ITMO Technology Transfer Center, @ITMO Techno Park, and Universidad Bernardo O'Higgins. About our project. Colicoco is an innovative food prototype created by Universidad Bernardo O'Higgins in Chile, aiming to tackle the issue of food loss and waste by repurposing agricultural surpluses into a nutritious snack. This cocada made from cauliflower not only contributes to environmental protection but also promotes a circular economy and food security. It enhances vegetable consumption, providing consumers with fiber, antioxidants, vitamins, and minerals. Led by nutritionist Ximena Rodríguez Pallere, the cohesive team includes teachers and students who have developed a promising product.

Valio announces key personnel and research themes for the leading project, Food 2.0 ✨ In February, Valio was selected by Business Finland to lead Food 2.0 - an initiative to develop the food system of the future and promote the competitiveness of food exports. Veera Virtanen has now been appointed as Ecosystem Lead of the partner ecosystem within the project. Further, developing the future food system will be divided into four research themes: 💎 Future products 🤖 Technology transformation 🥛 Regenerative production ♻ Circular economy and resource efficiency Around 50 business and community partners have already joined the ecosystem, and the goal is at least one hundred partners.
