TIP 1 - Always start with a market study!
Whether you do this internally or ask an F&B consultant to do it, make sure you go through this process! Way too often we see hotels deciding on what type of restaurant should go where purely based on either what’s working for other hotels in the area/city or on emotional/personal preferences of some of the stakeholders, which almost never results in the optimal F&B mix.
There are a number of factors to be considered - competition and success case studies alone aren’t enough. Knowing who your target audience is, their demographic profile and F&B preferences as well as what’s trending in the F&B world both locally and internationally, or whether an international brand/chef will work or not, are all critical aspects to be studied.
A properly executed study will guide you, not only on what type of restaurants and bars you should implement but also important aspects like adequate number of outlets and positioning, as well as providing a reference for all stake holders to agree on.
