Scottish asparagus is in season right now, it's a short season and only lasts through May & June. Here are 5 ways to use it including this soup recipe which is great for using up the ends, which can sometimes be a bit tough. 1. Steamed with cheese sauce or hollandaise sauce. 2. Peel into ribbons and toss into a salad 3. Stuff chicken breasts with the tips and make a sauce with the stalks 4. Wrap the spears in Parma Ham & either grill or barbecue.
