Our new Ancestral Mead label pays tribute to the monks of St. Hilaire who were the inventors of method ancestrale winemaking, the originators of pet-nats that we borrowed from to develop our iconic Ancestral Mead style, with a few tweaks to make it work with honey and fast-paced commercialization. We mimic the natural seasonal temperature fluctuations of the high mountains where the cold would throw an active fermentation into hibernation, only to referment in the bottle at a later date to produce a brut effervescent wine. Our Ancestral Mead product line is an ever-changing absolutely unique product with every batch having its own character. When cellared for a prolonged period of time above 55 degrees Fahrenheit you can watch the honey-native probiotic colonies grow and consume residual sugar to produce carbon dioxide. We sell these meads straight from the tank to allow consumers the option to drink them fresh when they still are a bit sweet or to hold onto them for aging to produce a dry and bubbly mead. Most winemakers would consider this risky, not all distributors want to mess with this type of evolving and ever-changing product. Using only ever-fluctuating local artisanal honey only furthers this batch to batch uniqueness. Those that do love the natural craft and one-in-the-world production style, considered by all our competitiors to be too crazy to pull off, have fallen in love with the realest mead on the planet - wild fermentation is what our ancestors drank after all so there must be something to that, some connection we are building with our past, present, and future.
