Bowl food is the dining trend that took over American cuisine — but why now? If your grandparents always seem a little uncomfortable at Chipotle, it’s because for years American cuisine featured food items neatly separated on a plate. To them, bowl food came out of nowhere — only it didn’t. Predictive cultural intelligence helped restauranteurs anticipate the bowl food trend in the 90s. Here are the signs they saw: 1. It’s healthy. The growing trend towards healthy foods that maximized flavor served as an ideal market niche for bowl food. 2. It’s customizable. The growing popularity of Subway sandwiches showed restauranteurs the power of a meal assembled to the wishes of the customer. 3. It’s “shareable.” Bowl food and its array of bright colors and different ingredients made it a perfectly “shareable” food for social media. "Don't cheap out" is my new favorite phrase. I spend a lot of time working with operators to explore the difference between premium fruit purees and those that have a bunch of added ingredients and dyes. It only takes a side-by-side comparison of one beverage to clearly illustrate the difference. It's not unlike comparing a real strawberry to a strawberry-flavored hard candy.
