Wicked Bolognese Jacket Potato — you’re gonna want to save this one! INGREDIENTS: * 2 potatoes * Vegan sour cream * Vegan cheese * Chopped onion * Cilantro For the bolognese filling: * Wicked Jalapeño Burgers, ground * 1 ½ C BBQ Sauce * 1 onion, diced * 1 T spice blend: anise seed, fennel, oregano * ½ t smoked paprika * 1 Jalapeno, diced * 4 cloves garlic, sliced * Splash beer (optional) * Green onion, sliced * Pinch black pepper * Pinch salt RECIPE: 1. Heat up a non-stick pot on med-high heat, saute onion, jalapeno and garlic. Stir to combine. Add spice blend, paprika, salt, and pepper. Stir and saute further for 3 minutes, add a splash of beer to loosen up. 2. Add ground Wicked Jalapeño burger meat and BBQ sauce to the pot and bring to a slow simmering boil, cook for 15 – 20 minutes. 3. Serve on top of boiled potatoes and garnish with onion, cilantro, cheese & sour cream. Wicked Jalapeño Burgers available at Asda & Tesco
