🍐Pear Carpaccio Craze!🍐 PEARfection in the Kitchen with Chef Daniel Green & Neolea! This dish is refreshing, flavorful and sure to be a crowd pleaser!✨ INGREDIENTS: - 4 ripe pears - 5 oz (vegan) feta (regular works too!) - 1/2 cup walnuts - 3 tbsp honey - 1 tsp cinnamon - 2 tsp dried oregano - 2 tsp Neolea Smoked Sea Salt - A handful of fresh mint leaves - Juice and zest of 2 lemons - 1 small red onion - 2 tbsp Neolea Extra Virgin Olive Oil - 2 tbsp water - A few drops of Neolea Dark Balsamic Vinegar - Edible flowers for decoration INSTRUCTIONS: 1. Mix the walnuts with honey, cinnamon, and oregano. Roast in the oven at 350°F for 5-10 minutes until golden brown. Let cool and roughly chop. 2. Heat the honey with water over low heat until it begins to caramelize lightly (5-10 minutes). Stir in the smoked sea salt and mix well. Add 1 teaspoon of olive oil for extra smoothness, then let it cool. 3. Slice the pears thinly and toss with lemon zest and juice. 4. Cut the red onion into rings and crumble the feta. 5. Arrange the pear slices on plates. Top with red onion rings, crumbled feta, and the walnut crunch. 6. Drizzle lightly with the smoked salted caramel, Neolea olive oil, and a few drops of Neolea Dark Balsamic Vinegar. 7. The smoke alarm is not a timer! 🤣 I love baking. This new passion blossomed once I became a mum, allowing me to channel my creativity into a different outlet. Like most beginners, I started small, attempting muffins and butterfly cakes. However, my biggest challenge arose with my daughter’s first birthday. I wanted the satisfaction of baking (and decorating) the cake myself, but my decorating skills were far from the vision I had in my head! Choosing the flavour was easy; we had an abundance of lemons from our garden, so lemon sponge it was! I settled on a three-layer sponge cake, thinking it would be manageable. For decoration, I opted for simple rolled-out icing, buttercream, and edible flowers. Yet, translating the beautiful vision in my head to reality was tough. My skills were different from how I perceived them to be! And then there was the taste – would it even be good? They say the proof is in the eating, and fortunately, it was a hit! The cake went down so well that a friend even requested the same cake for their birthday. Bonus! As my daughter has grown, we love baking together. She’s excellent at cracking eggs without shells getting into the mix – much better than me! It’s become a cherished activity, giving us quality time together, and I find it therapeutic too. Many birthday cakes later, I embraced a new challenge: gluten-free baking. I approached this with nervous anticipation, having heard that gluten-free baking is harder, doesn’t rise as well, and doesn’t taste as nice. I decided to keep it simple, swapping gluten-free flour for regular flour in a familiar recipe that I know works well. The first attempt was nerve-wracking. I watched the cake in the oven, and to my surprise, it rose so much it overflowed the cake tins and made a mess. Lesson learned: next time, I’d make three layers instead of two. The results? “Lovely,” “you wouldn’t know it was gluten-free,” “so light and tasty” – music to my ears! This success allowed me to continue enjoying baking while adapting to new challenges. Just like in baking, the wedding industry often presents new challenges. When planning a wedding, start with what you know works and then make creative, incremental adjustments. For example, if a couple wants a unique theme or a specific décor style, begin with familiar elements and gradually incorporate new ideas. This approach allows you to manage expectations and deliver stunning results. Whether you’re dealing with unexpected weather changes, sourcing rare flowers, or creating custom design elements, adapt and innovate as you go. By embracing challenges and adapting creatively, you can turn potential obstacles into opportunities for excellence, ensuring that each wedding is as memorable and unique as the love story it celebrates. P.S. For anyone tackling a new baking challenge: remember that the smoke detector is not a timer, and if all else fails, there’s always the option to call it “rustic”! 😆
