This Irish sausage roll recipe makes you the ultimate comfort food packed with meaty goodness and wrapped in a blanket of the easiest homemade flaky puff pastry. Every time I eat one, I am immediately transported home to Ireland.

Frozen butter is my secret ingredient. The colder the butter, the flakier the pastry. Grating the butter also gives you a flaky pastry. It also means no hands, so the pastry stays cold. Use ice water because you want all your ingredients to be very cold when making pastry. Adding lemon juice tenderizes the gluten in the pastry so it's flaky.

This is a shortcut puff pastry, so we aren't folding and doing that whole process. I like to make a double batch and freeze the unbaked sausage rolls to be baked off another time.

Swap option: Swap the pork sausage for a plant-based sausage. Make your own fresh breadcrumbs rather than using store-bought. Add herbs like sage or thyme to your sausage meat. You can make the pastry using a firm block of vegan butter.
