What would happen if pepperoni pizza joined hands with a buttery grilled cheese sandwich? Magic, that’s what. When these two powerhouses join forces, they create something very special — an elaborate, elevated grilled cheese sandwich. 

Folks have a lot of opinions when it comes to grilled cheese. Everything from the type of cheese used to what goes on the outside of the bread is up for discussion. Some people spread the bread slices with softened butter, some use mayonnaise and others use a combination. We like to keep it simple and lather on the butter for this recipe. As it melts, it forms that unmistakable golden brown crust on the grilled cheese. 

As far as cheese goes, we like to use a combination of pizza cheeses — mozzarella and Parmesan. These sandwiches start off like any usual grilled cheese. Fry each buttered side in a skillet until the cheese is gooey and melted. Next,  top each sandwich with even more mozzarella and a few slices of pepperoni, then pop them under the broiler for a few minutes, just until the cheese melts and the pepperoni cups curl up at the edges. We can’t get enough of the classic pepperoni and cheese combo, but you can also keep it vegetarian by using thinly sliced mushrooms and/or bell peppers instead of pepperoni. Either way, serve it the way any respectable grilled cheese sandwich should be — dipped into creamy tomato soup.

  • 8 slices white sandwich bread
  • 4 tablespoons unsalted butter, room temperature, divided
  • 12-16 mozzarella cheese slices
  • 16 pepperoni slices
  • fresh basil (optional)
  • 4 tablespoons grated Parmesan cheese

Preparation

1.

Preheat the oven to broil.

 Spread one side of each bread slice with 1½ tablespoons butter.

On the non-buttered side of one slice, layer 2 to 3 slices of mozzarella cheese. Then put the other slice of bread on top, buttered side up.

In a skillet or fry pan set over medium-low heat, grill the sandwich on both sides until golden brown and cheese is melted, about 4 minutes.

Top each sandwich with 1 slice of mozzarella cheese, followed by 4 slices of pepperoni and basil (if desired). Transfer the sandwich to the oven and broil until the cheese melts. Garnish with 1 tablespoon Parmesan cheese per sandwich. Serve with tomato soup.
