It is considered the soul of beer: Malting Barley Malting barley is often referred to as the "soul of beer" because it is considered the most important ingredient and gives the beer color and fullness of flavor. In Germany, for example, bottom-fermented beers such as Pils and Export may only be brewed from barley malt. Two-row spring barley is most often used for beer malt production – around 20 kg of malting barley are needed per 100 litres of beer. A high germination capacity or germination energy is indispensable for malting barley, which has a major influence on the price of the barley as a quality feature. As a rule of thumb, a germination energy of 95% to 97% is usually expected for malting barley. What influence do storage conditions have on germination capacity? Studies have shown that cool-stored seeds with a moisture content of 15 to 16% have a significantly higher germination capacity than dry, warm seeds. At the same time, the effect of the cold shortens the dormancy period, which usually lasts several weeks for barley. Thus, the rapid cooling of the barley to a protective temperature of no more than 15°C is recommended in order to maintain the germination capacity and at the same time shorten the germination dormancy. Optimal storage of organic grain The demand for organic grain is growing steadily. However, it is not only the cultivation that plays a role, but also a wide variety of specifications must be observed during storage. Targeted cooling can prevent the development of insects and moulds in a completely natural way - without chemical additives - while nutrients and vitamins are preserved. Why is this so important? Grain lives on after harvesting. In so-called self-respiration, carbohydrates are converted into carbon dioxide, water and heat by absorbing oxygen. Like this, stored grain heats up and offers insects and mold an optimal environment. However, if the grain is cooled to below 13 °C, the insects fall into hibernation and their development and reproduction is interrupted. At the same time, harmful mycotoxins do not form at low temperatures. Cooling has another advantage: it is not only effective, but also very efficient.
