    💫 Big Chocolate Dreams 💫 “We set out to use a byproduct to create a solution for commercial chocolate issues. And if we really want to make an impact either on the food waste side or the chocolate industry, we need to think on quite a large scale,” - Maximillian in Azure Road A wise woman once told us “dream big, as to not end up as a cute dinner time story” So BIG CHOCOLATE 🍫 , we must admit, we’ve been dreaming 🙃 A big thanks to Rebecca L.     Finally making our way out of the Roskilde Festival-induced haze, we wanted to extend a giant thank you to all the partners that helped put together the 💥 "Future of Indulgence"! 💥 It was really great to see such a varied demographic of people show up and go cookoo over pastries, sweets & tea sandwiches- all powered by upcycled products.     Festival season is upon us! We’re pleased to announce that we’re taking part in Northern Europe’s largest music festival - for the third year in a row, Roskilde Festival is generously providing us with a platform to explore and expand what a festival’s culinary offering could look like. In our world, festivals are the very essence of indulgence, and this year we set out to develop something for the Food Is Now stage emphasizing exactly that. We’re taking cues from the Danish tradition of Sønderjydsk Kaffebord and the Brit’s afternoon tea and combining it with cutting-edge upcycling food innovation! There will be a lavish offering of THIC-laden treats, re-imagined tea sandwiches, upcycled cocktails, and loads more (maybe an 🍦 float?!) To sweeten the pie we’ve enlisted the help of some of our closest industry friends: Agrain by Circular Food Technology BRØL | B Corp®Hansens IsFoodpeople A/SREDUCED who’ll be providing ingredients, products, recipes, expertise, and their warm presence, of course 💕 The event has limited seating and tickets can be purchased for a (symbolic amount) via the link in comments.     At the heart of it all, at endless food co, we're hospitality people. Restaurants are where we learned everything about flavour, creativity, and the pursuit to provide people with incredibly delicious foodstuffs. It's also our core motivation to use our hospitality connections to grow our vision around 🍫 THIC(This Isn't Chocolate). We've had the pleasure to work with restaurants like SEM in Portugal (go run, because what they're doing is amazing) to showcase the flavour and functional potential of our alt. chocolate. Over many months, they have featured THIC on their menus in a variety of ways- here shaved like truffles over an ice cream based dessert! 🍨 We're incredibly happy to see their creativity take over, and proud to see these industry peers show their guests whats possible in the world of delicious, sustainable alternatives. 🤠 Also, THIC on a truffle shaver? Wicked.

    That's right! Together with friends from Matr Foods, REDUCED, Agrain by Circular Food Technology, CONTEMPEHRARY, Foodexperts, and Novo Nordisk Foundation, we'll spend a couple of hours focusing on how upcycling and biosolutions can help us better utilize our raw materials.     This past week at Sweden Foodtech's Big Meet, there was a bit of a kerfuffle (this is an industry term) when we couldn’t figure out which cookies were made with THIC, and which were made from real chocolate. 🍫 It was a whole ordeal. (You can see Daniella Illerbrand trying to calm the raucus crowd) Palate after palate of the most distinguished tech gourmands struggled to differentiate. Alas, I guess we’ll never know. And maybe thats quite alright. 🤠 🤸♂️ Thanks Sweden Foodtech for inviting us this year! Very cool set up, and great lineup of people trying to steer the food system in a better direction. Getting on stage with Christian Alexander while Matthew Orlando was a giant floating virtual head from Singapore was definitely a new experience! Stockholm feels like a second home, so hopefully we’ll be there next year :)
