Our new Venetian style cod ravioli are a tribute to Venice’s love for baccalà mantecato, a dish deeply woven into the city's culinary heritage. This creamy, whipped salt cod delicacy has been enjoyed for centuries, typically spread on crostini as a cicchetto, a small Venetian snack, similar to tapas and paired with the iconic spritz or with a crisp Venetian white wine. But did you know that baccalà’s journey to Venice was an accident of history? In 1432, Venetian merchant Pietro Querini was shipwrecked off the coast of Norway, where he encountered the local tradition of air drying cod. He brought it back to Venice, and over time, the city transformed it into the dish we know today.
