Was great to hear from the UK's fastest growing food brand, THIS™, about their approach to processing in general, and extrusion in particular. (Note the absence of "plant-based" in the preceding sentence - 47% growth last year.) Luke Byrne and Kelsey Kanyuck reminded us that extrusion can deliver to consumers on taste, cost & health. The main challenge remains in improving the amino acid profile plus the bioavailaility of nutrients. There are lots of concerns about #ultraprocessedfoods at the moment.
