Here's a few tips on how to pack dishes and other breakables: As you pack your dishes, put packing paper around each one, then wrap bundles of five or six together with more paper. Pack dishes on their sides, never flat. And use plenty of bunched-up paper as padding above and below. Cups and bowls can be placed inside one another, with paper in between, and wrapped three or four in a bundle. Pack them all in dish-barrel boxes. #MovingCompany #123MovingandStorage

Continuing my series of posts from the Hawaii edition of The Krehbiel Letter ... *Pay by the ounce.* Most bars offer a 12- or 16-ounce pour of beer. Some offer "flights" of 5-ounce pours. But when the beer comes out of a tap, it's possible to charge by the ounce (with special equipment). At one bar they issued a bracelet with a chip that activated the tap and recorded how much you poured of each beer. *Lesson.* Don't limit your offering based on irrelevant or out-dated factors like the size of a bottle or a glass. Also, think of all the data you can collect if you allow people to do exactly what they want to do, rather than forcing them into your prefab configuration.

Everyone kisses the cook but no one compliments the dishwasher… even though clean dishes literally keep food on the table. In engineering, how you balance your cooking and dishwashing resources is up to you, but knowing how much time is already being spent on value demand vs. failure demand/KTLO is important to know whether that allocation is working or needs to change. One of the biggest hidden costs is not just the amount of KTLO, but that it’s continually increasing and becoming a silent killer of velocity. In a perfect world, the chef would check with the dishwasher before adding an extra plate under each soup bowl — almost doubling the work for the dishwasher. But more likely, everyone is just annoyed when there is a bigger backlog of dirty dishes at the end of the night.
