𝙃𝙤𝙬 𝙙𝙤 𝙬𝙚 𝙢𝙖𝙠𝙚 𝙖 𝙧𝙚𝙘𝙞𝙥𝙚 𝙨𝙘𝙖𝙡𝙖𝙗𝙡𝙚? Our product development team finds creating recipes that can be scaled up and successfully brought to market exciting yet challenging. Let us share a bit of our process with you and demystify how we do it. 👉 How long does it take to achieve a recipe that meets this scalability challenge? The truth is, there is no one-size-fits-all answer to this question. Developing a scalable recipe involves a process of experimentation, testing, and refinement that can take several weeks. The scalability of a recipe depends on various factors. Ingredients used, processing methods, preservation techniques, and desired sensory properties are all factored in at this stage. 1️⃣ The crucial first step is to fully understand the client's needs and expectations. This involves an evaluation of available resources, production limitations, cost constraints, and target consumer preferences. Once these parameters are established, we can begin developing an initial recipe that fits these requirements. 2️⃣ The next phase involves rapid prototyping sessions. In our lab, we conduct small-scale tests to evaluate the effectiveness of selected ingredients, proportions, and processing methods. We strive to achieve a balance between product quality, reproducibility, and commercial viability. 3️⃣ Once you approve the initial recipe, we enter the scalability phase. Now it's about adapting the recipe to a large-scale production environment at the co-manufacturer's site. Taking into consideration processing times, available equipment, and food safety regulations. A good scalable recipe must be consistently reproducible while maintaining the expected standards of taste, texture, and appearance that consumers demand. 👉 So, to answer the initial question, the time required to develop a scalable recipe varies from case to case. It depends on the product category and complexity, client requirements, available resources, and the initial development stage. ✅ However, with the experience, skills, and the lean approach of food & beverage technologists, it is possible to shorten the initial recipe development timeline to 6-8 weeks. 👋 Say hello to some of our happy food technologists: Alexandra Papadopoulou, François Le Cam, Stefania Rubicondo! #fooddevelopment #foodtechnology #foodconsultant #foodtech #foodnews
