Cooking with Yoshiko is a Sydney based Japanese cooking school which advocates for the health, energy and beauty within Japanese food, without compromising the taste. Each class is run by Chef Yoshiko Takeuchi, a pioneer in promoting Japanese superfoods, the real key to Japanese longevity. A professional with over 30 years of experience in the culinary industry, she brings flair and excitement in the kitchen with her fun personality and engaging teaching methods. The school offers a wide range of physical and virtual classes which can be tailored to any and all events, from group workshops, team building cooking classes and hen parties cooking classes.

    🐾 Hi there, Paddy here! 🐱⁠ ⁠ Do you munch on seaweeds? If not, I highly recommend adding them to your diet! 🌿⁠ ⁠ Why? Seaweeds are bursting with minerals and are super alkalizing! 🌊⁠ ⁠ One reason why Japanese cats live long is because they feast on lots of seaweeds! 🇯🇵⁠ ⁠ Yoshiko adores seaweeds and nibbles on various types daily, but Nori is her absolute fave! 🍣⁠ ⁠ Here in Australia, more and more people are snacking on nori, and Nori roll shops are popping up everywhere! But watch out, not all Nori is good. Even if the package has Japanese writing, most are not a product of Japan. Why's that a problem? Yoshiko accidentally bought non-Japanese Nori once, and it tasted awful, like chemicals! She even found green powder on it. Yuck! She wonders what it was... ink powder, maybe? Who knows! 🙀⁠ ⁠ Yoshiko tried to feed me good quality nori, but I just don’t like it! 🐟⁠ How about you? Do you enjoy Nori? 🍙⁠

    🍛Curry filled with Japanese ingredients!⁠ ⁠ 🤩This dish is a rare treat for me, as it's impossible to recreate in Sydney due to the scarcity and high cost of the ingredients. I was inspired to make it when my mum asked for a curry recipe without roux (which typically contains lots of fat, sugar, and MSG).⁠ ⁠ For the curry base, I used garlic, onion (and tomato, which I forgot to add initially) with curry powder. I stumbled upon a huge, fresh garlic in the shop, which was a pleasant surprise!🧄⁠ ⁠ 🗝️The key to this curry is the use of Japanese mushrooms - maitake, shimeji (hon shimeji & buna shimeji ) and enoki. While I can find all these mushrooms in Sydney, maitake mushrooms are extremely expensive! They cost only a quarter of the price here, if not less. 💸⁠ ⁠ ✨️Another essential element is Japanese root veggies - burdock, lotus root, and daikon. Daikon is easy to find in Sydney, but fresh burdock and lotus root are rare and pricey. I've bought them less than five times in over 20 years!⁠ 😍My family prefers thick gravy, so I added Kuzu dissolved in water to thicken it slightly. The curry is packed with umami from the garlic, mushrooms, and root veggies, especially burdock.⁠ ⁠ 🥰No MSG, sugar and too much fat like Typical Japanes curry, instead, beautiful umami flavour from mushrooms and burdock and super healthy! Everyone enjoyed!💚⁠ ⁠ What are your favorite curry ingredients?😋
