Introducing Pitch - the final single malt in ‘The Founding Series’ by Holyrood Distillery. The series includes Embra, our lightly peated whisky, and Ambir, which showcases the velvety textures and sweet flavours that you get from using specialty malts. Pitch explores the untapped potential of yeast in whisky-making by ‘pitching’ two yeasts that are typically used when making red wine, Pepe Nero and Toro Nero, to give red fruit sweetness. Our Distillery Manager, Calum Rae, said, “The name ‘Pitch’ comes from the process of adding yeast to wort to start the fermentation process. This is an important piece of the puzzle for us as we look to bring the flavour through every part of distillation. “With Pitch, think chocolate and hazelnuts from the malt, with the yeast specially selected to boost those chocolatey flavours. The chocolatey spirit is then matured in Oloroso casks, dialling up the nutty notes. It’s like being chased by a fruit and nut bar determined to give you a giant hug.” Pitch sits at 49.4% ABV with tasting notes of cacao, blackcurrant, stewed red fruits and hints of coffee. https://lnkd.in/eHiEKJCW #drinkresponsibly

We’re ending the week with a double celebration! Not only are we launching the final whisky in our ‘Founding Series’, Pitch, this morning - last night, Rob and Kelly, our co-founders, along with Huw, our Managing Director, collected the prestigious ‘Distiller of the Year’ award at the Global round of the World Whiskies Awards on behalf of the team. The past year has been nothing short of a whirlwind for us. We've launched 13 exciting new products, distilled over 25 innovative recipes, and proudly earned our SALSA accreditation. Our export market has expanded to include 15 new countries, and we’ve introduced a bespoke whisky in collaboration with Lumo Trains. Along the way, we’ve forged incredible partnerships with names like James Eadie and Pilot Beer, and welcomed over 38,000 visitors to our Brand Home. These are just a few of the many milestones that have made this year such a success. We’re incredibly proud of the Holyrood Distillery team and deeply grateful for the support we’ve received over the past six years. A heartfelt thank you to all of our customers, visitors, partners, and everyone who has been part of our journey. We know exactly how we’ll be celebrating tonight—with a dram of Pitch! We don't say ‘cask finished’, we don’t say ‘double matured'. We say re-rack. Re-Racked Series #1, available now. We’ve always been proud of our experimental and flavour-first approach to creating whisky. Our upcoming release is no different. Re-Rack #1 celebrates the best of tradition with a bit of Holyrood edge. This whisky started maturation in a first-fill bourbon cask and ended in a rum barrique. Limited to 227 bottles, this series has allowed our team to be creative with maturation to push the boundaries of flavour innovation. “We’re kicking 2025 off with a belter of a whisky [...] Quite often we’re known for experimenting with yeasts in our single malts but this series is all about the cask. We’ve cut the flowery language, we’re not talking about finishing or double maturation, we’re simply moving the liquid to a second cask, or re-racking, to bring in different characteristics and amp up that flavour.” - Calum Rae, Distillery Manager.
