Consumers are getting their nutritional advice from doctors and scientists versus influencers. There's a move away from magic bullet cures and towards common-sense healthy eating that everyone understands, such as more veg. Consumers look to naturally sweet foods as concerns around low-calorie artificial sweeteners grow. In general, the unrecognisable and artificial is rejected in favour of minimally processed or 'clean label', including plant-based. I am virtually attending the The Wall Street Journal Global Food Forum in Chicago and while many speakers have been sharing their expertise, two leaders really stuck out to me: 🥣Gabrielle (Ellie) Rubenstein called cottage cheese sexy! She also is of the opinion that consumers do not want technology in their food. They want less steps between the raw ingredient to the finished product. Additionally, taste and experience are still very important versus technology. 🍫Ellie also spoke about the fact that the protein industry will grow to $32 billion by 2029 and CLEAN ingredients are still in (enter dairy). The new category they are doubling down on as an investment company: Protein Bars and protein in traditional baked goods. Clean, shelf stable and affordable. 🌿Kat Cole spoke about their premium product (AG1) with premium positioning: the daily spend is $3 per day for a scoop of powder that fills nutritional gaps.
